Sweet Potato Applesauce Bread with Chocolate Frosting
Ingredients
- 3/4 cup (210 g) sweet potato puree
- 1/2 cup (120 g) applesauce
- 1/4 cup (80.5 g) maple syrup
- 1/4 cup (54 g) olive oil
- 1 egg
- 1/2 cup (110 g) brown sugar, packed
- 1¾ cups (210 g) oat flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
Chocolate Frosting (Optional):
- 3 tbs butter, melted
- 1/3 cup (105 g) maple syrup
- 1 tsp vanilla extract
- 1 cup (120 g) powdered sugar
- 1/4 cup (20 g) cacao powder
Instructions
- Preheat oven to 350℉. Line an 8×4 inch loaf pan with parchment paper.
- In a large bowl, whisk together the sweet potato, applesauce, maple syrup, olive oil, egg and vanilla until smooth. Next, whisk in the brown sugar. Then, add in the oat flour, baking powder, baking soda, cinnamon, salt and mix until incorporated. Transfer the batter to the loaf pan and spread out evenly. Bake for 50-55 minutes or until toothpick comes out clean. Allow to set in the pan for 10 minutes and then transfer to a wire rack to allow to cool completely before adding on the optional frosting.
Chocolate Frosting:
- In a small bowl, whisk together the melted butter, maple syrup and vanilla until smooth. Next, add in the powdered sugar and cacao powder and whisk until incorporated and smooth. Frosting should have a thick consistency.
Notes
- Store leftovers in an airtight container on your counter for up to 4 days.
- You can use mashed bananas instead of applesauce.
- You can use all purpose flour instead of oat flour.
