Zucchini Cottage Cheese Fritters
A beautiful way to boost your veggies with some added protein!
These are some of my favorite meal prep zucchini fritters because I can enjoy them anytime and get that added bonus protein from the cottage cheese! Bonus: they’re low in calories and carbs!
Its very important to ring out the zucchini shreds as best you can. You can make these gluten free by removing the breadcrumbs and adding almond flour instead.

Hi Stella, Can these be air fried? Thanks!
The taste is very good but I am not sure how you can pick it, mine Gm falls apart even when I tried to flip them. I did squeezed all the water out, not sure what happened.
Hi Krina, i’m glad the flavors were there for you at least! Maybe add a bit more breadcrumb or flour to the mixture next time. OR you can bake them in a muffin tin for 20minutes.
Hello, I just made, and gobbled up two fritters. They were very nice and I’ll definitely make them again. I have questions regarding the cottage cheese. Did you use full or low far? Did you use large or small curd.
Can’t wait to make these. What is the sauce you served with them?

Haven’t made yet, but always make potato/zucchini fritters. Is the recipe missing baking powder? Also may help those with fritters that are falling apart to salt the zucchini to get all the moisture out before incorporating.
question: Do you use 2 cups of squeezed zucchini or 2 cups of shredded zucchini, then squeeze out liquid?
thanks!
HI Tara, two cups post squeeze
