Zucchini Cottage Cheese Fritters
A beautiful way to boost your veggies with some added protein!
These are some of my favorite meal prep zucchini fritters because I can enjoy them anytime and get that added bonus protein from the cottage cheese! Bonus: they’re low in calories and carbs!
Its very important to ring out the zucchini shreds as best you can. You can make these gluten free by removing the breadcrumbs and adding almond flour instead.

Zucchini Cottage Cheese Fritters
Equipment
Ingredients
- 2 cups grated zucchini, liquids squeezed out
- 1 cup cottage cheese, drained
- 2 eggs
- 1/4 cup breadcrumbs (or almond flour)
- 1/3 cup grated pecorino cheese
- 2 scallions, fine chop
- 1 tsp Italian herb blend
- salt and pepper to taste
- Optional Dip: Lazy Tzatziki
Instructions
- In a large bowl, combine the squeezed out zucchini shreds, drained cottage cheese, eggs, breadcrumbs, grated cheese, scallions, italian herb blend, salt and pepper to taste. Form about 9 medium sized patties.
- Heat a large skillet with 1 – 2 tbs olive oil. Once hot, add in the patties cook until golden brown, GENTLY flipping halfway through – about 4 minutes per side.
- Optional: squeeze on some fresh lemon juice!
Notes
Store leftovers in an air tight container in your fridge and eat cold or reheat in a mini counter top oven~

I read the comments about the recipe being watery and in spite of squeezing the liquid out of the zucchini and draining the cottage cheese, mine was too darn wet too!! I scraped the patties off the grill and added another half cup of bread crumbs. This did the trick! So, the bread crumbs contain a typo I believe. It should be 3/4 cup, not 1/4 cup. The flavour was delicious and the texture was what I expected (with the added bread crumbs)

This just happened to me before when i make zucchini muffins it’s usually caused from zucchini being to wet
Are you positive you squeezed your zucchini dry. I made that mistake when I first cooked with it. I was positive I had, but when I tried the recipe a second time, I followed advice and found I got twice the liquid out than I did the first time. Big difference in the outcome. If you try again, good luck.

You are exactly correct: turn over GENTLY.
My first batch fell apart when I turned them over. I made smaller ones in the second batch. That was better.
I cooked them for less than 4 minutes per side. They tasted delicious. My husband liked them.
Maybe next time, I will bake them

I’m confused: the top of the recipe states 7 servings, but the instructions state to make 9 patties. I deal with diabetes and take insulin, so correct nutritional info is very important to me. Hi Rose, this is great for you! I would swap in any grated cheese like parmesan cheese.
