3 Ingredient No Bake Breakfast Brownies (vegan)
Whenever I get those sweet cravings, I reach for this simple recipe. I’m a huge fan of snacking on dates thanks to that caramel flavor so this treat was right up my alley.
These little bars have my three favorite: caramel dates, peanut butter and chocolate from the cacao powder. Its always hard to control myself around that kind of dessert.
The great thing about this recipe is that you can use any nut or seed butter here (think almond butter or sunflower seed butter as a sub) OR you can even swap out quick oats for the nut butter to make this dish a little lighter.
The chocolate drizzle at the end is totally optional and not necessary but I did it for aesthetic purposes. However, I do highly recommend the flaky sea salt topping! If you like this dish you will love my 6 Ingredient Peanut Butter Oat Cups (Vegan).

3 Ingredient No Bake Breakfast Brownies
Ingredients
- 1 cup PACKED Medjool dates, pitted
- 1/2 cup natural peanut butter (or almond butter)
- 2 tbs cacao powder
Optional Toppings:
- 2 tbs dairy free chocolate chips, melted
- flaky sea salt
Instructions
- Line a 9×5 inch loaf pan with parchment paper.
- Pit your dates and then soak them in warm water for 10 minutes. Drain them and then put them directly into a food processor (DO NOT DRY THEM). Pulse for a few minutes until they break down completely. Add in the nut butter and cacao powder and pulse until incorporated.
- Transfer the crumbly dough to the pan and push it down and out with a small rubber spatula or your fingers, until flat and uniform. Transfer the pan to your fridge to set for 30 minutes.
- If doing the melted chocolate topping, wait until you're ready to drizzle to melt the choclate because it will dry. Slice the bars and enjoy!
is there another substitute you could recommend for the dates ?
These were actually very yummy. Texture and taste like fudge. Might add some oats next time to make them firmer, less gooey. Though still very delicious.
