Simple Lemon Arugula Couscous Feta Salad
We found this salad idea on Instagram and instantly knew we had to try it. The lemon feta flavors are all classic and yummy. The couscous salad makes this salad hearty yet light. You can easily sub in orzo pasta, quinoa or wheat berries!
This salad is perfect for add ins like canned tuna fish, a hard boiled egg or two, air fryer salmon or some shredded chicken breast. A simple healthy meal is then created and enjoyed!
You can use any type of thin cut lettuce for this salad. You can also sub in shaved parmesan for the feta if you like. Next time I might add walnuts or pine nuts to this salad too for a little crunch!

Simple Lemon Arugula Couscous Feta Salad
Ingredients
Dressing:
Salad:
- 1½ cups uncooked pearl couscous
- 5 oz baby arugula
- 4 Persian cucumbers, sliced
- 1/3 cup Kalamata olives
- 5 oz feta crumbled
Instructions
- Add all of the dressing ingredients to a large bowl. Whisk together until it thickens. Taste and adjust lemon tang or salt if needed.
- Cook your couscous as per package instructions. Once cooked and slightly cooled, add it to the large bowl with the dressing. Along with the baby arugula, cucumber, olives and feta. Toss all to coat with dressing.
This salad was absolutely delicious. Such an easy salad to make and my children devoured it. This will be a staple in our home for sure. I would have never thought to add couscous into a salad.

I made this evening with red quinoa and used freshly shaved Parmesan cheese. Everything else as per recipe- was delicious. Will make again
