Easy Greek Yogurt Peanut Butter Protein Pudding
Greek yogurt makes everything better including these overnight oats.
I’ve been seeing an influx of sweet cottage cheese recipes and just don’t see the correlation. The flavors don’t work for me. I think Greek yogurt is definitely always the way to go and its got basically the same amount of protein.
All the ingredients are very basic. You can use peanut butter or almond butter. You can use maple syrup or honey for the sweetener. Next time I want to try a banana added in too.
If you don’t want to make the hard chocolate shell on top, you can simply mix in some mini chocolate chips, blueberries or dried fruit!

Easy Greek Yogurt Peanut Butter Protein Pudding
Equipment
Ingredients
- 1½ cups Greek yogurt
- 1/2 cup all natural peanut butter
- 1/4 cup maple syrup
- 2 cups rolled oats
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1 cup water
Chocolate Layer:
- 1/2 cup sugar free chocolate chips
- 1 tsp olive oil (or any neutral oil)
Instructions
- In a blender or food processor blend the first 7 ingredients till smooth. Taste and adjust sweetness if desired. Transfer evenly to your sealable jars or tuppers and refrigerate overnight.
- Melt your chocolate and olive oil on low heat, stirring constantly until smooth. Evenly distribute the chocolate to your containers to form a flat top and refrigerate for another 10 minutes to harden.

Hi Jason, yes my shell was hard too. Just give it 10 minutes on the counter and then crack it with a spoon or knife

Hi Sirrell, that should work I believe! I don’t have much experience with sugar free maple syrup. I have used SF sugar and that is really sweet. Put a little in the blender and try the mixture before adding too much in. In this recipe, you can taste it and add as you go! Hope this helps! Cheers!
Anyway I made the pudding part last night using SF Syrup. It took a good while of using my food processor to break up the oats..Is that normal? Haven’t tried it yet but I did put one containter in the freezer lol..See if its more like ice cream..
