These are my favorite breakfast for so many reasons. They are simple to make, sugar free and taste amazing. They are simply put: grab-and-go perfection. Please don’t sleep on these.

Ingredients:

No one can beat these healthy and naturally sweet ingredients. I used two medium sized ripe bananas, so that is why applesauce was added. If you have two LARGE bananas, you can skip the applesauce. The bananas provide the sweetness here so that we can skip the excess sugar. We used almond milk (what the nutritional information is based on) but you can use any milk you have on hand.

The other sweetener is maple syrup, but you can switch it for some honey. These bars are so versatile, where you can sub in anything you like for the blueberries like chocolate, nuts, dried fruit, etc. The next version of these will definitely be with some chocolate.

Instructions

  • Preheat your oven to 350°F. Line an 8×8" brownie pan with parchment paper.
  • Mash your bananas in a large bowl. Mix in the apple sauce. Add in the eggs, milk, syrup and vanilla and mix.
  • Stir in the oats, baking powder, cinnamon, salt and blueberries. Transfer your batter to the pan and bake for 30-35 minutes or until starting to turn golden on the sides. Allow to cool in pan for 5-10 minutes then remove and cool on rack prior to slicing.

Notes

You can use blueberries or chocolate chips or nuts as an add in for these.
If you have two large bananas, you can skip the applesauce.
