Broccoli Chicken Crust Pizza (Low Carb)
My favorite food of all time has go to be pizza. I grew up in a small south shore Long Island neighborhood with a bunch of pizzarias. My yiayia and mom also used to make us homemade pizza crust from scratch whenever we wanted. Pizza played a huge part in my upbringing.
My kids and I still enjoy takeout pizza from time to time when I don’t feel like cooking. At the same time, I prioritize protein and low carb foods when I’m cooking, so I couldn’t help but create this hybrid broccoli chicken crust pizza.
This chicken broccoli crust pizza really is as simple as it looks. The only extra step, in my mind, is the steaming of the broccoli. Everything else is seamless and flows so quickly. My kids and I love customizing our homemade pizza with our favorite toppings.

Broccoli Chicken Crust Pizza (Low Carb)
Ingredients
- 4 small crowns broccoli
- 2 lbs lean ground chicken
- 4 eggs
- 1½ cups shredded mozzarella
- 2/3 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1 tsp each salt, Italian herb blend + onion powder
Toppings:
- 1 cup shredded mozzarella
- 1 oz pepperoni slices
Garnish:
- chili pepper flakes, basil + marinara for dipping
Instructions
- Preheat oven to 425℉. Line 2 large rimmed baking sheets with parchment paper.
- Steam your broccoli crowns whole for about 8 minutes or until fork tender. Transfer to a cutting board, remove the stem parts and snack on them. Chop the florets tiny. Transfer to a cheese cloth or thin and clean dish towel and proceed to ring out as much of the liquids as possible.
- In a large bowl, add in your ground chicken, eggs, 1½ cups shredded mozzarella, broccoli, grated parmesan, garlic, salt, Italian herb blend, onion powder and mix until combined. Next, transfer half the mixture to the baking sheet and gently spread out into a round shape, packing it together. The crust should be about 1 inch thick. Bake for 22-25 minutes or until golden brown on top. Repeat with the remaining mixture on a separate baking sheet.
Assembly:
- Once crust is done, remove from the oven and you may need to blot it with a paper towel if chicken has released any moisture. Sprinkle evenly with the remaining mozzarella and pepperoni. Pop back in the oven and BROIL for a few minutes or until cheese is melted and golden brown on top. Always watch your food closely when you turn on the broil function!
Notes
- Store leftovers in an airtight container in the fridge.
- This recipe makes TWO PIZZA PIES. I sliced each pie into 6 slices.. One serving is two slices.
- You can use any toppings you prefer.
