Easy 4 Ingredient Lime Loaf

4 Ingredient Lime Loaf

- 3 eggs
- 14 oz sweetened condensed milk
- 1¼ cups self rising flour *
- 2 large limes, zested + juiced (4 tbs juice)
Lime Icing:
- 1 cup powdered sugar
- 1 tbs lime juice (+ zest for garnish)
- 2 tbs milk of choice
Instructions
- Preheat oven to 350℉. Line a 9×4 inch loaf pan with parchment paper (or spray with oil or grease with butter).
- Note: If you don't have Self Rising Flour, simply add in 1 1/4 cups all purpose flour, 2 teaspoons baking powder and 1/4 teaspoon salt.
- In a large bowl, whisk together the eggs and the sweetened condensed milk until smooth. Sift in the flour and mix until JUST fully incorporated. Lastly, whisk in the lime zest and juice until fully incorporated. Transfer the batter to your loaf pan and bake for 35-40 minutes or until a toothpick comes out completely clean.
- Allow the loaf to rest in the pan for 5 minutes then transfer to a wire rack to fully cool before adding on the icing.
Lime Icing:
- Whisk together the ingredients in a small bowl. Adjust with milk if you prefer a drippier consistency. Add icing to a fully cooled cake.

Loaf was just okay. Don’t know if I would make it again. Despite the 4 Tbsp of lime juice and zest, the loaf was very mild tasting. It was moist so definitely good yo eat. Ifollowed the icing recipe but it made waaaaay to much icing and, unfortunately, between the 2 Tbsp of lime juice and Tbsp of milk, it was more of a glaze so too late to “ice” the loaf

This one was a miss for me. Made as written, but with a little extra lime based on other reviews. Did not appreciate the texture of this loaf. I found it very solid and heavy. Wouldn’t make this one again.

Has ANYONE actually made this with LIMES?! Not sure why it can’t just be made with LIMES as the recipe shows, instead of people always posting comments on changing it.
