Ingredients 

Lime Icing:

  • 1 cup powdered sugar
  • 1 tbs lime juice (+ zest for garnish)
  • 2 tbs milk of choice

Instructions

  • Preheat oven to 350℉. Line a 9×4 inch loaf pan with parchment paper (or spray with oil or grease with butter).
  • Note: If you don't have Self Rising Flour, simply add in 1 1/4 cups all purpose flour, 2 teaspoons baking powder and 1/4 teaspoon salt.
  • In a large bowl, whisk together the eggs and the sweetened condensed milk until smooth. Sift in the flour and mix until JUST fully incorporated. Lastly, whisk in the lime zest and juice until fully incorporated. Transfer the batter to your loaf pan and bake for 35-40 minutes or until a toothpick comes out completely clean.
  • Allow the loaf to rest in the pan for 5 minutes then transfer to a wire rack to fully cool before adding on the icing.

Lime Icing:

  • Whisk together the ingredients in a small bowl. Adjust with milk if you prefer a drippier consistency. Add icing to a fully cooled cake.

Notes
