Stella- I am sorry ! You can delete my comment saying it wasn’t good. I lowered the flour amount haha!!! no wonder it was eggy!!! sorry about that . I will give it another try 🙂 I also didn’t realize this was a gluten free group! oops ….
No worries whatsoever! I’m so happy the recipe ended up working out great for you!
Will this work with any other alternative flours (cassava, chickpea, coconut, etc?) AIP won’t allow nuts or nut flours.
Hi Debra, I personally haven’t tried it, but through my experience with flours, yes it should work with cassava or chickpea!
I made this yesterday to take to my Sister in assisted living. She loved it! I used chickpea flour because that’s what I had. I’ll make with almond flour next time. Would be great with a side of bacon or sausage. Thanks for the recipe !
Hi Susan, That’s so amazing! I’m so glad your sister and you liked the recipe! Thank you for trying it out and coming back to share your feedback about the chickpea flour too!
Looks amazing? How many servings does it make?
Hi Nora, thank you! This makes 6 large slices or 8 smaller slices.
I just made this… what a great alternative to just eggs for breakfast when following a low carb diet. Thank you! This will be in our rotation from now on!
Hi Joy, I’m so happy you guys enjoyed the recipe! Thank you for coming back to rate it and leave your feedback!
Healthy ez lil sugar makes for perfect treat. Suggestion to freeze this? Thank you ❤️❤️
Could you substitute corn meal for the flour? If so, how much ? Or use 1/2 flour + 1/2 cornmeal?
Also – I have 8″, 9″, 10″ and 11″ fry pans that go in the oven – which would be best?
This sounds good, but love combination of cornmeal and blueberries

Yiasou Penny!
It could work with the cornmeal, but I haven’t tried it myself so I cannot say for sure that it will succeed here.
As far as the pans are concerned, I would use a 9 or 10 inch pan for this recipe.
It does sound so delicious though!
wonderful recipe! wondering if anyone has tried strawberries?
Hi Wendy, this works with strawberries, raspberries, peaches, mangoes! Enjoy!
Can i melt the butter separately and add it to a baking pan with the blueberries and batter, or the pan has to be hot before adding everything? I don’t have a safe oven skillet?
Hi Liz, I think for best results the pan should be heated but it can work with a baking dish instead. Just may need a bit longer bake time!
Enjoy!

Greek-style yoghurt subs for the milk, to give a nice boost in protein.

Can I use different berries? Can I use frozen berries?
Hi Mel, You can use any fruit you like, however, I havent tried it with frozen berries. It should work though!
Could I use regular flour if I don’t have almond flour? Would it be a 1 to 1 ratio
Hi Myra, YES! But do 1/2 cup all purpose flour!
