Easy Coffee Banana Loaf (5 Ingredients)
This coffee banana bread loaf is so quick and easy to throw together. Most of these 5 ingredients are typically always on hand. I adore that there is no added sugar or sweetener. The sweetness comes from the bananas (and chocolate chips – if using).

This is definitely a unique recipe with the added coffee ingredient. If you don’t have coffee, all you need is 2 teaspoons instant coffee whisked in with 3 tablespoons water. You can also just use milk instead.

Since this loaf recipe is flourless you would expect a mushy bread texture but its the exact opposite. Whenever I use nut butter, the texture comes out just like a traditional bread.

Make sure to use zero sugar chocolate chips to keep these at a low glycemic index. If you like this recipe you will love my 6 Ingredient Flourless Peanut Butter Chocolate Chunk Banana Bread or my Flourless Banana Peanut Butter Bars.

Easy Coffee Banana Loaf (5 Ingredients)
Ingredients
- 3 medium ripe bananas, mashed
- 1 cup peanut butter, smooth + creamy
- 1 tsp baking powder
- 2 eggs
- 3 tbs coffee
Optional:
- 1/3 cup chocolate chips
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350℉. Line an 8×4 inch loaf pan with parchment paper.
- In a large bowl, mash the bananas. Then add in peanut butter, baking powder, eggs, coffee, chocolate chips, vanilla and mix together until combined. Transfer batter to loaf pan and spread out evenly. Optional: top with a few extra chocolate chips for aesthetics. Bake for 35-40 minutes or until toothpick comes out clean. Allow to set in the pan for 15 minutes and then transfer to a wire rack to cool completely.
Notes
- Store leftovers in an airtight container.
- If you don’t have peanut butter, you can use any other nut butter or seed butter.
- This recipe is not very sweet since there is no added sugar or maple syrup. If you want to make it sweeter add in some sweetener or chocolate chips.
- Nutritional info includes chocolate chips.
- If you don’t have coffee, all you need is 2 teaspoons instant coffee whisked in with 3 tablespoons water. You can also just use milk instead.
hi Stella dose the bread have to be in the fridge
Do you add brewed coffee or coffee grounds?
Hi Angie, I used brewed coffee. You can also use instant coffee diluted in waater. I believe there is a NOTE about it above in the recipe box. Enjoy!
I’m surprised this turned out so well! I really was doubtful without any flour in the recipe! Next time, I think I might try adding a few scoops of protein powder for some extra protein. I did add a little monk fruit sugar because my bananas were not fully ripe.
This was surprisingly good! I was skeptical without any flour in the recipe! I followed the recipe and added vanilla and chocolate chips. I added a little bit of monk fruit sugar because my bananas were not overly ripe. Next time, I may try adding a few scoops of protein powder.
Hello!! I love watching your recipes. I am curious if you have breads (savory and sweet) where no bananas are used? I would like to try this bread but would like to substitute the bananas for something else (I’m allergic). What would be your ideas? And do you have other breads where bananas can be substituted or omitted? Many thanks for sharing your creativity with us! I made the spinach/feta cookies which were so fantastic!
HI Lisa, i have so many recipes without bananas! You would have to search up loaf and bread on my website and they will appear.
Thank you for supporting the website and I promise you will find many non-banana recipes here. My daughter is not a fan of bananas so we make all kinds of loaves and breads in this house !
Loved the Coffee Banana Loaf but it really did not have a coffee taste. It calls for 3 tbsp & I added a little more but still didn’t taste it
Hi Marsha, my coffee is definitley on the strong side. Maybe thats why?
I just made this and it is so good! very moist and just the right amount of sweetness. I did use chocolate chips and vanilla.

Can the eggs be replaced with flaxseed for vegans? (That would be 1 tablespoon of ground flaxseed and 3 tablespoons water per egg. Allowing in to sit for 10 minutes before adding it to the recipe.)
Hi Pamela, I haven’t tried this recipe with flax eggs so i cannot say for sure. That would be the method i would use though!
Hello,
I have a daughter with an egg allergy. Have you had any luck with egg replacer or flax, by chance?
Thanks!
Hi Brooke, I have not tried this particular recipe with egg substitutes.
I have tried flax eggs in a similar recipe and it works. The texture changes but it does hold up.
Oh my gosh!, I think this is my new favorite banana bread Stella!
You would think I wasn’t excited about it. Using 3 sorry looking bananas, choclate chips stragglers from the freezer, that were left over from a past desert and coffee from the bottom of the pot left from this morning!
I hope it lasts for morning coffee, because it’s that good. Now I’m anxious for the rest of my bananas to ripen!
Thanks so much Ramona!
I’m so glad you loved the recipe!
Its such a great flourless loaf!

Hi Lisa, I’m so glad you tried it and loved it! Thanks for the kind feedback!

Hello! I mean 3 tablespoons liquid coffee.
There is also more info in the Notes Section how you can make it with instant coffee granules.
Enjoy!

Hi Samina this is a flourless recipe!
I am allergic to bananas and apples. Can you substitute anything f bananas??
HI Kathleen, I haven’t tried it with this recipe but I have with other similar type of recipes where I sub in pureed sweet potato or pureed pumpkin for the bananas. My daughter doesn’t like bananas so I totally get it!
