Flourless Cottage Cheese Bread (5 Ingredients)
This loaf is simple, healthy and protein packed.
Cottage cheese is really having its moment right now and I figured its the perfect ingredient to add to a bread. Of course I try to keep mine healthy, sugar less and add in more nutrients when possible so I created this easy to make flourless loaf.
You can pulse this smooth in a blender or food processor or just mix the ingredients in a bowl. If you don’t like oats, you can use all purpose flour, almond flour, rice flour or bread flour but add in about 1 cup + 3 tablespoons of any flour you may use. We love to top ours with butter, honey and cinnamon!

Flourless Cottage Cheese Bread Loaf
Ingredients
- 2 cups cottage cheese
- 1½ cups rolled oats
- 4 eggs
- 2 tbs olive oil
- 1 tbs baking powder
- 1/4 tsp salt
Instructions
- Preheat your oven to 350℉ Line a 9×5 inch loaf pan with parchment paper.
- Strain your cottage cheese of its liquid as best you can and discard the liquid.
- Add all the ingredients to your blender and pulse until mostly smooth. Pour the batter into your pan and bake for 35-40 minutes or until toothpick comes out clean. I loosely covered mine with foil for the last 15 minutes because it was getting too tan on top.
- Allow to set in the pan for 5 minutes then transfer to a wire rack to cool for 10 minutes prior to slicing.
Notes
Store on your counter in an airtight container or in your fridge for up to 5 days.
You can also just mix this in a bowl if you don’t have a blender.
Almond flour or all purpose flour can be subbed for the oats but decrease the amount to 1 cup + 3 tablespoons of flour.

This bread is amazing… I like to make this with Kalona Organic Whole Milk Cottage Cheese. There is hardly any liquid, therefore, I don’t strain the cottage cheese. I also add 1/3 cup of unsweetened shredded coconut. I follow the recipe as written except for these two minors adjustments. I will toast a slice in the toaster oven, and then spread some Justin’s Honey Peanut Butter or I will do butter and honey, and folks … I’m in pure heaven. I love it both ways. Love, love, love, this recipe.
I discovered your channel and have made several of your recipes, loved all except one, just a personal preference. I want to add zucc, apple and sautéed onion for a savory bread that I do not have a recipe on. I don’t how much of each to add. I know that both zucc’s and apples have a lot of water which equals moisture, just need your help please. Oh and I will try this recipe as well, stupid easy…yes. Thanks so much for your joy and the ease of making these recipes.
I religiously eat this every morning with coffee and it sets the whole day right. I’d just move to know if the metrics are 11g protein per slice (8) or if total? Has to be slice right?

Another fantastic recipe. I just have to point out that I got the wrong type of oats (quick cooking type) and it still work wonderfully. Now I’m ready to make it again with the right kind of oats. It will be my go-to flourless bread. Thank you, Stella!
I tried this recipe as is , only skipped one yolk , I baked it for 55 minutes and and the size of the slice are so small like the size of 11/2” why ? The flavor is delicious but I wanted like slice of regular bred 😔

i just tried this with greek yogurt as i didnt have cottage cheese. i used the same measurements.
im not a baker so not sure what is wrong and how to adjust but my bread is still wet and mushy at the bottom of loaf. should i reduce the yogurt measurement? thank you, excited to get this simple yet healthy recipe right!
curious about if I can freeze bread and the calorie count for 1 slice?
I used 1 cup old fashioned oats
1/4 cup hemp hearts seeds which probably changed the flavor a bit.
Everything else was same the same.
It was very tasty!! And filling.
I will do this again and maybe try rolled oats only.

I’ve made this twice now using gluten free quick oats and it is the best gluten free bread recipe I’ve ever tried. It’s so light and fluffy compared to gluten free flour mixture breads. My favorite way to eat it is with almond butter spread on it. I love this recipe. Two thumbs up!
