Greek Quickie Cutting Board Chopped Salad
Chopped salads are so much fun to make at home. You know exactly what’s going into your food. Bonus that it’s so satisfying to chop up everything to oblivion on your cutting board. You don’t need anything fancy to get started – just your greens, some ingredients and a sharp knife. We haven’t been able to stop making them since trying this trend a few weeks ago. I knew a yummy Greek version was in order next!
Of course, as with all these types of salads, you should customize the meal to what you have on hand or available to you. You can sub in sliced ham, salami, etc for the protein.

Greek Quickie Cutting Board Chopped Salad
Equipment
Ingredients
Salad:
- 2 handfuls mixed greens
- 1/8 green bell pepper, sliced
- 3 cherry tomatoes, halved
- 1/4 cup sliced pickles, or cucumber
- 5 Kalamata olives
- 3 slices red onion
- 2 tiny peperonccinis (optional)
- 2 oz feta cheese
- 2 slices fresh cooked turkey or chicken breast
Dressing:
- 2 tbs olive oil
- 2 tsp red wine vinegar (or lemon juice)
- 1 tsp Dijon mustard
- 1 tsp honey (or maple syrup)
- 1/2 tsp dried oregano
- salt and pepper to taste
Instructions
- Place all your ingredients on the cutting board: starting with the greens and always ending with the meat. Chop chop chop until you get your desired chopness. Transfer the salad to a large bowl and then add in the dressing ingredients and toss to coat all. Taste the salad and adjust if you want more tang from the vinegar or more sweetness from the honey, etc.
