Healthy Zucchini Brownies
If you’re looking for a good-for-you yummy snack, these zucchini brownies are for you. We are big fans of sweet treats but on really cutting back on the sweetener. These zucchini brownies give you all the chocolate feels without the guilt!
Slice your zucchini into medium sized chunks prior to adding to your mini food processor. I used coconut sugar, but you can use any granulated sweetener here. I used olive oil but you can use any neutral oil like avocado oil or melted butter. If you like a healthy zucchini you should try my Healthy Zucchini Banana Bread.

Healthy Zucchini Brownies
Ingredients
- 1 small zucchini
- 1 egg
- 1/4 cup cacao powder
- 1 cup rolled oats
- 2 tbs olive oil
- 1/2 cup coconut sugar*
- 1 tsp vanilla extract
- 1/3 cup chocolate chips
Instructions
- Preheat oven to 350℉. Line an 8×4 inch loaf pan with parchment paper.
- Cut your zucchini into medium size chunks. In a mini food processor, add in the zucchini chunks, egg, cacao powder, rolled oats, coconut oil, coconut sugar, and vanilla and blend until smooth. Add in the chocolate chips and mix in. Transfer batter into pan and spread out evenly. If you like, sprinkle the top with extra chocolate chips for aesthetic. Bake for 40-45 minutes or until toothpick comes out clean. Top with flaky sea salt. Allow to set in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- *Use 3/4 cup of coconut sugar for sweeter brownies.
- Store leftovers in an airtight container.
- Make sure you use dairy free chocolate chips if you want to keep this dairy free.
- To make this gluten free make sure you use gluten free oats.

HI Jennifer, best stored in the fridge for 4 days or on your counter for 2-3 days!
I by mistake added 1/3 cup cacoa powder. I only had a 9 by 5 loaf pan therefore the time was considerably shorter. I will make it again. I did use a small zucchini but I think it should be measured in ounces. All things considered I will make it again. Love your recipes!

Why do you not given a weight for the zucchini? My idea of a small zuke may differ to yours. I’ve noticed this with a lot of recipes, not just ours.
Is cacao powder the same as cocoa powder or if it something different?
Hi Kathy, Yes! Same but different. Cacao is raw cocoa powder. Only ingredient is cacao powder.
Cocoa powder usually has other ingredients added in.
But you can use either in the recipes. If you click on it in the ingredient list above, it will take you to the brand i use.
can you use regular sugar? If so, same amount?
