Low Carb Chicken Nuggets
A delicious take on fast food that’s way more delicious, healthier and easy to throw together.
We couldn’t stop eating these nuggets. First of all, as with all of my recipes, this is so easy to throw together. Secondly, YOU DO NOT MISS THE BREADCRUMBS at all. I promise you. They taste like they have the breadcrumbs. I really hope you try them because you will love them and especially the dip is our fast favorite with fries and these nuggets.

Low Carb Chicken Nuggets
Ingredients
Chicken Nuggets:
- 2 lbs ground chicken
- 2 eggs
- 1/3 cup grated parmesan cheese
- 1/2 cup shredded mozzarella
- 3/4 tsp each garlic powder, onion powder + paprika
- 2 tsp salt
Coating:
- 1/2 cup grated parmesan cheese
- 3 tbs potato starch (or tapioca starch or corn starch)
- 1/2 tsp paprika
- 1/2 tsp dried parsley
Spicy Ketchup:
- 1/4 cup ketchup
- 1/2 tbs Worcestershire sauce
- 1 tsp Sriracha sauce
Instructions
- Preheat oven to 425° F. Line a large baking sheet with parchment paper.
- In a shallow bowl, combine the Coating ingredients with a whisk.
- In a large bowl combine the Nuggets ingredients with you hands until just incorporated. Form your nuggets into small or medium flat ovals; I dropped meat clumps into the coating mixture and then formed the oval shapes and then flattened them on the baking sheet. Spray the tops of the nuggets with olive oil. Bake for 15 minutes then flip. Bake for 10 more minutes. Time varies with the size of your nuggets. I formed medium sized nuggets (not too small). Keep in mind they shrink when baked. Mine took a total of 25 minutes to cook.

these were awesome! I chose to top them with the mild buffalo sauce from Walmart and I put it on after flipping them and WOW… they really Pop!

These are fantastic. I used ground turkey, and halfed the salt, but otherwise followed the recipe. I would absolutely make these again and again. So good! Juicy inside, crunchy outside. You’re right, you do not miss the coating. Loved them. Thanks for sharing.
Wow. I used ground turkey and shredded monterey jack cheese in lieu of chicken and mozzerella because that is what I had on hand. My husband and I ate up the first tray out of the oven *straight from the tray*–served up with some buffalo dipping sauce. YUM. I did find that I needed to almost triple the coating. In subsequent coating batches, I subbed panko for the corn starch–honestly, both were delicious, although I might prefer the panko a bit more. Thank you for the wonderful new recipe. Husband said he’s so excited homemade nugs are now a part of our life. Haha.
I wish the videos were slower to see it all.

The only thing I needed to do was double to coating. I didn’t find I had enough to do the whole recipe.
These were so easy to make and came out AMAZING. My 9 year old son has been asking for chicken nuggets almost every night for dinner, and I don’t want him to only eat super processed ones. He tried these and said they were even better than the frozen ones! We loved them.

I made thesemlast night,Im not used to cooking anymore,and so it said 6 servings,took me longer than i expected,so next time i will cut the recipe in half,although I do have enough for me to last a few days,I have to say,mine were alittle larger,but it really tastes good.I will makethese again!!!!better than fast food nuggets.
