Low Carb Chicken Nuggets
A delicious take on fast food that’s way more delicious, healthier and easy to throw together.
We couldn’t stop eating these nuggets. First of all, as with all of my recipes, this is so easy to throw together. Secondly, YOU DO NOT MISS THE BREADCRUMBS at all. I promise you. They taste like they have the breadcrumbs. I really hope you try them because you will love them and especially the dip is our fast favorite with fries and these nuggets.

Low Carb Chicken Nuggets
Ingredients
Chicken Nuggets:
- 2 lbs ground chicken
- 2 eggs
- 1/3 cup grated parmesan cheese
- 1/2 cup shredded mozzarella
- 3/4 tsp each garlic powder, onion powder + paprika
- 2 tsp salt
Coating:
- 1/2 cup grated parmesan cheese
- 3 tbs potato starch (or tapioca starch or corn starch)
- 1/2 tsp paprika
- 1/2 tsp dried parsley
Spicy Ketchup:
- 1/4 cup ketchup
- 1/2 tbs Worcestershire sauce
- 1 tsp Sriracha sauce
Instructions
- Preheat oven to 425° F. Line a large baking sheet with parchment paper.
- In a shallow bowl, combine the Coating ingredients with a whisk.
- In a large bowl combine the Nuggets ingredients with you hands until just incorporated. Form your nuggets into small or medium flat ovals; I dropped meat clumps into the coating mixture and then formed the oval shapes and then flattened them on the baking sheet. Spray the tops of the nuggets with olive oil. Bake for 15 minutes then flip. Bake for 10 more minutes. Time varies with the size of your nuggets. I formed medium sized nuggets (not too small). Keep in mind they shrink when baked. Mine took a total of 25 minutes to cook.

Απλά ΥΠΕΡΟΧΑ !!!!!
Τελεια!! Σε ευχαριστω για το μηνημα!!
Love these nuggets so much!! Flavor is perfection, and they are juicy/tender!! Only wish is they were more crispy on outside..I used arrowroot, perhaps that’s why. Are they supposed to be crispy?
Sauce is yummy too!!
These are EXCELLENT! I ended up baking them in the oven for 10 minutes then Air Frying for 10 minutes and they are exceptional. Any idea on how to make large batches and freezing for future use?
Sounds like my next plan! Thanks for sharing with us and I’m glad you enjoyed!!!
Can I use breadcrumbs instead?
yes!
Did you swap the cheese for breadcrumbs?
Are these any good served cold or at least room temperature I was thinking of taking them to an outdoor block party
best served warm…
Going to make these today. How many total nuggets does the recipe make?
Hi Sandy, I believe around 24 nuggets total
Umm, okay, I ate almost all of them! I could not stop either, haha. So easy to make, so delicious. I did not have potato starch or tapioca starch, I used arrowroot and it was fine. As always, thank you for your recipes, so good!!
Thats awesome Lucy!! Glad they were enjoyed and I thank you for the rating!

Very good recipe, thank you, I succeed at first try and my family and I loved these nuggets. like those at “restaurant with a clown”.
hahahahaha that’s good I think!!!
I would love to try, could I make these in the air fryer and if so, how long?
Hi Rebecca, absolutely cook them in the air fryer! I would do 7 minutes per side.
Oh my goodness, these are the BOMB diggity! Easy, delicious and now part of our weekly meal plan! No need for panko, the parma mixture works Great! Thank you! 👏🥳
How many does this recipe make? It says 500 calories but is that for 10 nuggets or 2 nuggets
Hi Lexi, the nutrtional info is for one fourth of the total nuggets
These look great!! Do you think you could add some riced cauli to this? Or would it wreck the cohesion??
Simply delicious and very easy to make!!! Ευχαριστώ !!!
I love all your recipes. These were delicious! I used panko 🙂
Fantastic!! These are spot on. I left out the shredded mozzarella, simply because I didn’t have any on hand. I am THRILLED whenever I can add something to the rotation that all three of my kids will eat. What a relief that they are so much healthier than store bought. THANK YOU!
Love these just tried these today and they were a hit with my kids! Thank you
Hi Bella, Glad the kidds liked them!! Thanks for trying out the recipe!!
I would like to try this recipe tomorrow. but here in Lebanon, we don’t have the starch that you posted. what can I use instead?.
Hi Leina! Just use regular all purpose flour! Enjoy!
How many does this recipe make?
hi, the nutrition information.. am I right in assuming that is for 100g of these nuggets prepared as per the recipe? thanks 🙂
Sounds great, will try w/o ketchup. Any suggestions for locarb replacement for potato starch??
arrowroot powder, tapioca powder, or corn starch
If I have none of those around, will it be ok without?
can I use almond flour instead of potato starch?
Hi Doreen, i would sub in corn starch, tapioca starch, arrowroot powder OR all purpose flour instead of the potato starch!
This recipe looks amazing…..wondering if you’ve tried swapping the cheese for breadcrumbs for the coating mixture?
I’d like to make them for my toddler who is not gluten free.
Hi Maddy, sure you can use breadcrumbs!
These were delicious! Everyone loved them. I’ll be making them again and freezing to have on hand. Can’t wait to try your other recipes!
Hi Lisa, so happy they were enjoyed by ALL! Thanks for the rating too!
At first I thought they were not turning out the way they looked in the oven. I baked for 10 min and air fried for 10 minutes. They were really good everyone liked them. I tried some with regular bread crumbs and they were not as good. I will make them just a little smaller next time.
HI Becky glad you liked the nuggets in the air fryer – thank you for sharing your feedback with us!
These sound great 😊 how many nuggets does this recipe make?
I need to know exact serving size to count carbs for my diabetic grandson.
Thank you
Denise
HI Denise, Thanks so much! This recipe makes 24 nuggets and the Nutritional info is for 4 nuggets. I hope your grandson enjoys them!!
My boys love these! The flavor is amazing and they are so juicy. I’m always looking for new, healthy recipes for my boys and I’m happy to add this one into my recipe collection.
HI Theresa, Glad the boys enjoyed the nuggets! Thanks so much for the kind rating!
Wow! These little nuggets were a HUGE hit in my house this week. 🥳 My husband could not get enough and declared that we MUST add these to our weekly plan! Delicious flavor, SUPER EASY for a quick memorable meal. Thank you!! ♥️
Hi Laurie, glad they were enjoyed by you guys! thanks for the kind rating!
Yum! I was skeptical but now I’m HOOKED! Looking forward to trying more of your recipes.
Thank you!
Tasty! But 2 teaspoons of salt was too salty IMO.
I used egg white protein powder instead of any starch and they came out perfect. Crunchy and light.
I made them exactly as described. They’re really delicious. it would be really helpful if there was a size (by inches) or measurement of the raw nugget before cooking. For 2 pounds of ground chicken, we made a lot more than 24 nuggets. So, six servings at 4 nuggets each seems off?
Thanks so much for the delicious recipe.
How many nuggets are in a serving size? Are you doing it by ounces like 1oz per nuggets? Is that nutritional facts the entire meal, all the nuggets made from the 2lbs?
Sooo delicious. But me & the parchment paper don’t get along! Lol
Hi! Is the nutrition facts per piece? And how many medium sized nuggets have you made based on your recipe? Thanks!
Great easy, healthy and great for my little granddaughter!!!
Hi Irene, glad you and the family liked them – especially your granddaughter!
These chicken nuggets are so tasty and easy to make. Will be making them again soon!
Made these and they did not last!
I got to try a few. I was surprised because I made two full sheets.
The nuggets and sauce were both delicious. I’ll have to double next time so the whole family can try!!!
I could live on these!
These look amazing!! Can I freeze this nuggets ? Cooked or uncooked ? Thanks !
