Easy Coffee Banana Loaf (5 Ingredients)
This coffee banana bread loaf is so quick and easy to throw together. Most of these 5 ingredients are typically always on hand. I adore that there is no added sugar or sweetener. The sweetness comes from the bananas (and chocolate chips – if using).
This is definitely a unique recipe with the added coffee ingredient. If you don’t have coffee, all you need is 2 teaspoons instant coffee whisked in with 3 tablespoons water. You can also just use milk instead.
Since this loaf recipe is flourless you would expect a mushy bread texture but its the exact opposite. Whenever I use nut butter, the texture comes out just like a traditional bread.

Easy Coffee Banana Loaf (5 Ingredients)
Ingredients
- 3 medium ripe bananas, mashed
- 1 cup peanut butter, smooth + creamy
- 1 tsp baking powder
- 2 eggs
- 3 tbs coffee
Optional:
- 1/3 cup chocolate chips
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350℉. Line an 8×4 inch loaf pan with parchment paper.
- In a large bowl, mash the bananas. Then add in peanut butter, baking powder, eggs, coffee, chocolate chips, vanilla and mix together until combined. Transfer batter to loaf pan and spread out evenly. Optional: top with a few extra chocolate chips for aesthetics. Bake for 35-40 minutes or until toothpick comes out clean. Allow to set in the pan for 15 minutes and then transfer to a wire rack to cool completely.
Notes
- Store leftovers in an airtight container.
- If you don’t have peanut butter, you can use any other nut butter or seed butter.
- This recipe is not very sweet since there is no added sugar or maple syrup. If you want to make it sweeter add in some sweetener or chocolate chips.

hi, is 3 tblspoons coffee, this means liquid coffee or actual coffee grounded up? would it taste more coffee like with more added coffee? congrats on your new book btw!! very exciting

HI Kathleen, I haven’t tried it with this recipe but I have with other similar type of recipes where I sub in pureed sweet potato or pureed pumpkin for the bananas. My daughter doesn’t like bananas so I totally get it!
