Anti Inflammatory Cauliflower Chicken Soup
This soup is one of my go-to’s since it takes around 30 minutes to come together. You can also leave out the chicken to make this vegan or vegetarian. It tastes great and you feel great after you eat it!
Whenever I feel like I need a boost of extra vitamins and nutrients, I make this amazing and creamy soup. The ingredients are typically always on hand and the process is completely uninvolved. There is minimal preparation and cooking time.
We have the ginger, turmeric, cauliflower, carrots and garlic as our anti inflammatory components to this dish. Not only are they healthy but flavor packed too. Its a win win soup situation.

Anti Inflammatory Cauliflower Chicken Soup
Equipment
Ingredients
- 1 tbs olive oil
- 1 small onion, chopped
- 2 carrots, diced
- 5 cloves garlic, minced
- 1 tbs ginger, grated (or paste)
- 1/2 tsp each turmeric + paprika
- 1 tsp dried mint
- salt and pepper to taste
- 1 head cauliflower, florets
- 4 cups low sodium chicken broth
- 2 chicken breasts, cooked + shredded
- garnish: olive oil drizzle + lemon
Instructions
- In a large pot, heat your olive oil on medium. Add in the onion and carrot and saute for 4 minutes. Stir in the garlic and ginger for 30 seconds.
- Add in the turmeric, paprika, dried mint, salt and pepper to taste and stir to coat. Then add in the cauliflower florets and broth, cover the pot, bring to a boil and then reduce to a simmer. Continue cooking for 7 minutes or until the florets are fork tender.
- Using a large slotted spoon, transfer about 80% percent of the cauliflower to a blender and puree for 1 minute or until just smooth. Transfer this back to the pot along with your shredded chicken (if using). Stir to combine all. Taste the soup and adjust the salt if needed.
Thanks for this recipe. Loved it can’t wait to make it again. Only one thing, i didn’t purée the cauliflower cause I added the chicken at the same time. Chunky soup still very good 😋

Hi, am I reading the recipe correct? is it one tbsp of ginger? It completely over powered the dish and seems like a lot.
I haven’t tried the soup yet, but was reading reviews first. I saw your question. I checked and found that 1 TBL of fresh grated ginger is the same as 1/4 TBL ground ginger, because the ground ginger is more concentrated. Not sure which you used. Maybe I will start with a bit less, and can always add more. Thanks for your post.

I LOVE soup, especially soup that is good for you! I’m a great cook, but soup is my nemesis in the kitchen. I can never get it right. But not this time! It turned out amazing and omg so delicious. Could I put the raw chicken breasts in the slow cooker with all of the ingredients, and just let it slow cook for the day. Shred the chicken once it is cooked? Wondering if that would jeopardize the flavours, or enhance? Thanks!
Great soup! When I baked the chicken, I roasted a head of garlic and pureed that into the cauliflower… nice addition to the broth.

It’s incredible! You described it perfectly. Easy to make, flavours are awesome mixture of spice and mint, chicken makes it a meal. It didn’t need it but I added a splash of cream at the end but would try bit of coconut milk next time. Thank you from a long time soup maker , I will be adding this to my rotation.!

I’ve never put mint in a soup! Would the flavour be fine without it? I’d love to try this recipe.
Hi Jen, You can totally leave it out if you like. Maybe do an Italian Herb blend or oregano or just omit it all together. Will still be awesome! I liked it personally with the mint!
Made it today without mint and added a parsnip. And tobe a total rebel, used an immersion blender! It is amazing.
