Easy Baked Brownie Oatmeal

If you’re looking for a healthy but not overly sweet treat in the morning, this recipe is for you! This baked brownie oatmeal comes together in a few minutes. I like to make this baked brownie oatmeal at the beginning of the week and enjoy it for multiple breakfasts.

I used my Sprout Living Chocolate PROTEIN POWDER but I understand you may not have protein powder. If not, simply add in more oat flour and a little maple syrup in its place. This oatmeal brownie bake will be your new breakfast obsession.

This recipe doesn’t involve extra mixing bowls for unnecessary cleanup – it all comes together in a baking dish. You can grease your baking dish with butter, but I skipped that step.

Easy Baked Brownie Oatmeal

  • Preheat oven to 350℉.
  • In a small baking dish, add in the banana and mash it with a fork.Next add in the oat flour, protein powder, cacao powder, baking powder, salt, milk, vanilla and mix until combined. Fold in chocolate chips. Bake for 12-15 minutes in your air fryer or 20-22 minutes in your oven.

  1. If you don’t have chocolate protein powder, you can use more oat flour. 
  2. Since this is not very sweet, you can add in a few tablespoons maple syrup if you prefer. I enjoy it without the added sweetener personally. 
  3. Make sure you use gluten free oat flour if you’re following that diet.
  4. Make sure you use non dairy milk and non dairy chocolate chips if you’re vegan.
