Baked Spanakopita Tortilla
Its no secret that spinach pie (aka spanakopita) is my love language. I grew up eating it all the time, homemade, everything from scratch. My family never used store bought phyllo. And it was the bomb to say the least. Indescribable. I, however love to create simple recipes that aren’t as time consuming but are still really delicious.
Make sure you pick up a large burrito sized tortilla, flour, low carb, spinach; any kind you prefer. My baking dish was 10×7 inches in size and I baked it in my mini convection oven.

Baked Spanakopita Tortilla
Ingredients
- 1 large burrito size tortilla
- 1 tbs olive oil
- 2 handfuls baby spinach, rough chop
- 2 scallions, chopped
- salt and pepper to taste
- 2 tbs dill, chopped
- 3 eggs
- 1 oz feta cheese, crumbled
- 1 handful shredded mozzarella cheese
- garnish: chili pepper flakes
Instructions
- Preheat your oven to 400° F. Lightly spray a small baking dish with olive oil. My dish was 10×7 inches.
- In a skillet, heat the olive oil and saute your scallions for 1 minute. Add in the baby spinach and toss to mostly wilt. Season with salt and pepper to taste. Stir in the dill and remove from pan. Pat dry with paper towel to remove any excess moisture.
- Place the tortilla into the dish with the edges coming up against the sides of the dish. Add in the eggs and season with salt and pepper to taste. Spread out the spinach mixture over the whites, crumble on the feta and the mozzarella cheese. Bake for 17-20 minutes or until set to your desired doneness. Remove from the pan and slice in half or quarters. Top with chili pepper flakes and enjoy.

l made this last night for dinner and again for lunch today. such an easy recipe. I didn’t use dill but used some souvlaki seasoning I had. I added the spinach first then poured the beaten eggs over top, then the cheeses and more souvlaki seasoning, cooked for 18 min.

This turned out well. I used gruyere cheese instead of mozzarella and two medium tortillas overlapped since the store didn’t have large. I like how this recipe is light and versatile. Would make again and maybe try other greens for fun.
I have made it three times and it seriously is so easy, yum and quick! I added sun dried tomatoes in last 1 and forgot to cook up spinach, tossed it in fresh. Such a winner and showed my kids how easy it is to make a healthy quick meal.

The flavors in this are amazing! You really have like your spinach. I actually forgot to add the pepper flakes but I used cracked pepper AND I used Habanero flour tortillas from Trader Joe’s. Yaaasssss!
Okay, I used my Airfryer at 400 and it was DONE in 10 minutes. Any more and I would have set fire to it. So, the bottom wasn’t crispy so I dropped it into the pan I used earlier to sauté. Whala! I am so happy she has a website and can’t wait to try more recipes!

Hi Anne, sure! Just lessen the amount to 1/2 teaspoon!
how long when air frying
12 minutes.. but check to make sure its to your desired doneness. Some people like their eggs well done and some air fryers are stronger than others.
This was really good 👍 but the tortilla stuck to the pan . Did I not add enough oil ?
I’m glad you liked it. Sometimes mine gets stuck too. That’s probably it! Add alittle bit more oil!

Hi Kim, You can beat the eggs before adding them in if you don’t want to see the eggs whole.

In recipe it says add eggs. Then later spread spinach over whites. Are you supposed to separate egg whites and only add them? This sounds delicious.
Hi Shelley, yes, it means add the spinach onto the clear parts (not the yolks). I like to leave those visible since they are raised. But its not mandatory. Thanks and I hope you try it!!
