Cheesy Vegetable Fritters
A cute little pancake that holds so much flavor and comes together in 15 minutes
I use these all the time in place of my sandwich bread. Some turkey slices, salami and cheese and I’m in heaven! I paired it with my favorite quick dip: my Lazy Tzatziki.

Cheesy Vegetable Fritters
Equipment
Ingredients
- 2 large zucchini, shredded + squeezed of liquids (about 4 cups)
- 3 small carrots, shredded (about 1 cup)
- 1/2 medium red onion, fine chop (about 1/2 cup)
- 1/2 cup flour
- 1 tsp of each garlic powder, onion powder + Italian blend seasonings
- salt and pepper to taste
- 2 eggs, lightly beaten
- 1 cup shredded mozzarella cheese
- Dip: Lazy Tzatziki
Instructions
- In a large bowl, mix all of the ingredients until combined. Using a 1/4 cup measuring cup, spoon the packed mixture onto a hot lightly oiled skillet. Flatten them out with the back of your spatula. Cook for 3-4 minutes per side and golden.

Very easy to do and a good recipe to keep on hand. I made them on a camping trip but I only had shredded broccoli slaw mix. I lightly sauteed the broccoli mix and they turned out fantastic. I added a quarter cup of cottage cheese for a little more protein along with the shredded. I will definitely make them again!

I substituted 1 large cucumber (seeds removed) and 2 small pattypan squash for the zucchini. The taste is a little different and a little more complex. My garden has been producing a surplus of cucumbers so I thought this might be a way to use up this surplus. They freeze well and you just heat them in a 350 oven for about 20 minutes.
These were wonderful! I salted the zucchini & squeezed out the water before combining everything. I used chickpea flour for the binder. The flavors were great!

These Fritters are amazing! I add 100gm of crumbled Feta…so delicious!
These are delicious. I’m gluten free so I used gluten free flour and they turned out perfect. I may try almond flour next time to reduce the carbs. I plan to use 2 of them as a top and bottom bun for a hamburger. my non gluten free husband has shared this recipe he loves them so much. I’ll be trying more of you recipes. Thank you!!!
