Cheesy Vegetable Fritters
A cute little pancake that holds so much flavor and comes together in 15 minutes
I use these all the time in place of my sandwich bread. Some turkey slices, salami and cheese and I’m in heaven! I paired it with my favorite quick dip: my Lazy Tzatziki.

Very tasty and very easy to cook
Hey Vera, thank you for trying my recipe and for the kind review!
I made the mixture ahead & put it in the fridge to chill. I also used a moulinex to shred the zucchini. They turned out great!! This will become a staple for our family, as my husband is diabetic. Thank you, it’s an awesome recipe!
Hi Colinne, glad its such a hit and you can make a great recipe for you hubby <3
Also thank you for the kind rating!
another great find on the site.
Thank you Gary!!
Can you bake them in the oven? Convection mode?
Hi Adrienne, Absolutely would work in the oven on convection mode… similar to an air fryer! I would do 400 F oven and around 25-30 minutes. Spray the tops lightly with olive oil too.
So glad you had this variation on here. I used my convection oven, and it worked great. I put them on parchment paper, sprayed with olive oil and flipped them over about 15 minutes in. Took the whole 30 minutes to get them all golden. I also did three that I had leftover and didn’t fit on my cookie sheet in a cast iron skillet on the stove, and they were amazing too.
I had two small zucchinis, so I added grated broccoli stalk and found some frozen edamame in the freezer, so I added that too. My husband and I both loved them!
Hi Anne, fantastic – those sound delicious!! Thanks for sharing your version on here too!
This recipe doesn’t work. It is floppy and a mess in the pan. Is it because I am making this in Greece? I followed exact measurments….
Hello Sher, I’m not sure what happened. Its a tested recipe and haven’t had any other complaints from other readers. I’m sorry it didnt work for you!
It’s possible not enough water was brought out of the zucchini before adding it to the other veggies.
oould be yes…
I had exactly the same experience, the taste is great But There is No way I could keep them in one peace, and the frying time to make the ingredients crispy is at least 20 minutes.
Same here. They were mushy inside and a bit bland. Just now reading all these comments so will remake incorporating suggestions. I used oat flour but will use regular next time
Maybe squeeze the zucchini more, it’s got a lot of water and letting it sit for a few minutes after the first squeeze, do it again in a dry towel. That’s probably it.
Taste great, But There is No way for me to get them done or chrispy and keep them in one piece in 15 minutes! It took me 45 minutes to peel and prepare the veggies by hand, second time I actually used a machine to shred everything, just that took 15 minutes, then about 30 minutes to frie in the pan.
Realistic time estimate is more useful for me. Love that You are positive:)
Today I Will make Your Bananabread with peanutbutter, look forward to have a weekend treat!

Can you make ahead and freeze them?
Definitely you can!

What is the dip that you are using? Thank you:)
My Lazy Tzatziki – it is linked in the recipe card!
Can I substitute Casava flour?
Hi Rachel, Cassava flour should work here…
Can you replace egg with flaxseed egg substitute. I prefer to use fresh garlic& Himalayan salt not garlic salt.
Yes, should work with flax egg

Hi Stella you are such a good vegetable cook with the enhancers. I would like to try this recipe but, can I substitute the zucchini with cauliflower or broccoli?
Hi Lisa, absolutely. Search up a broccoli fritter recipe I have on my site which could be of more guidance
Hi! Could I add ground chicken or turkey to this?
