Cheesy Vegetable Fritters
A cute little pancake that holds so much flavor and comes together in 15 minutes
I use these all the time in place of my sandwich bread. Some turkey slices, salami and cheese and I’m in heaven! I paired it with my favorite quick dip: my Lazy Tzatziki.

making them right now! OMG…Smells so good. do they freeze well?
how many servings does this recipe make
I haven’t tried these yet but will shortly. Thank you for including the detailed nutrition information – my husband has chronic kidney disease (only 1 kidney left) and diabetes, so I have to be cautious about recipes. You have made it easy in this recipe. Recipes from the Peloponnesos would be gratefully received!
You are the Best of Best….!!!!
Another hit from Hungry Happens! I prepared the recipe exactly as written (used 1 tsp salt and about 15 turns on the pepper grinder). I might add 1/4 tsp more salt next time, but once we topped with Tzatziki they tasted perfect. I prepped ahead of time and stored in the frig. They held together perfectly in the skillet as well! YUM!
Just DELICIOUS, me & my family love them, YOU are the best!!
Perfect
Just made these for lunch – they are so delicious and easy! Thank you – these will become a lunchtime staple for me!
I added locatelli cheese to this also.
they were delicious. Thank you for the recipe.
Made this last night and it’s off the hook delicious! I’m on a low carb diet, so I swapped out the flour for half almond flour, and half Fiber Gourmet’s new low carb flour (awesome) and it was killer (still will experiment). I also added in Herbs De Provence which gave it a nice kick. I also had a prob keeping these fritters from falling apart in the pan, but it was no biggie, I think they don’t want to tighten up till they start to cool. I think perhaps in the future I will make this recipe as a hash side dish (like corned beef or home fries). Will taste the same and cook faster! Thanks!
Hi Dina, so happy you enjoyed the fritters and thank you so much for sharing your feedback with us so that we can also apply changes!

What could you use instead of carrots please. I cannot eat them.
Hi Sandy, you can use butternut squash or parsnips as a substitute for the carrots!
