Cheesy Vegetable Fritters
A cute little pancake that holds so much flavor and comes together in 15 minutes
I use these all the time in place of my sandwich bread. Some turkey slices, salami and cheese and I’m in heaven! I paired it with my favorite quick dip: my Lazy Tzatziki.

Cheesy Vegetable Fritters
Equipment
Ingredients
- 2 large zucchini, shredded + squeezed of liquids (about 4 cups)
- 3 small carrots, shredded (about 1 cup)
- 1/2 medium red onion, fine chop (about 1/2 cup)
- 1/2 cup flour
- 1 tsp of each garlic powder, onion powder + Italian blend seasonings
- salt and pepper to taste
- 2 eggs, lightly beaten
- 1 cup shredded mozzarella cheese
- Dip: Lazy Tzatziki
Instructions
- In a large bowl, mix all of the ingredients until combined. Using a 1/4 cup measuring cup, spoon the packed mixture onto a hot lightly oiled skillet. Flatten them out with the back of your spatula. Cook for 3-4 minutes per side and golden.

Is there anything else I can use besides cheese?
Can the flour or potato starch in your recipes be substituted for almond flour? Do you think it would work?
Delicious fritters! As I am a coeliac, I replaced the flour with gluten-free plain flour and the fritters were perfect, especially with the lazy tzatziki dip. Thank you for such a great recipe. 👌

I had these random white squashes that my grandmother gave me sitting in my fridge, having no idea what to do with them. I ran across this recipe and thought, how bad can it be? An hour of vegetable shredding later, I baked my fritters. I replaced the zucchini with white squash, and used gluten free all purpose flour. They smelled amazing and tasted even better! Held together perfectly too. Thank you so much for this great recipe and finally giving me a great way to use the uninspiring squashes haha.

Just finishing up my first batch of these yummy fritters. I used a cheesecloth to squeeze out the water from the zucchini and was amazed how it just coming out! I think after reading many of the comments where people thought that the fritters were too mushy, I think they just didn’t get enough of the moisture out. Even with me, triple-squeezing the zucchini and mixing everything up in the bowl, there was still a little moisture that collected at the bottom of the bowl Not much, but just a little.
I used all purpose Gluten Free flour and they still came out perfectly!
Firm and tasty. I would warn everyone that if you’re using one pan, after a few batches the pan tends to keep getting hotter so I would turn down the heat a bit so the fritters can cook without burning.

Loved the fritters and everyone’s ideas about substituting cheeses and using broccoli slaw, among others. So versatile, and you can make it work even if you don’t have the same ingredients. Disappointed in the 15 minutes total time. Where do these times come from? Even with a top notch food processor and quick hands, no one could that fast. Frustrating. Wondering why such gross understatement of time. Anybody have an answer?
these were very good! I liked them better smaller than 1/4 cup cause they cooked really fast. Will definitely make again. I used fresh mozzarella and ground it in the food processor first. So good combined with the Tzatziki!
