Crispy Parmesan Cauliflower Steaks
I’m confident there’s no better way to eat your cauliflower than these.
If you know my blog, you know about one of my most viral recipes: Cheesy Cauliflower Steaks. People really responded to that recipe in a positive way. For me, this is similar but ten times better.
I grabbed my old recipe and combined it with the new trend of dipping veggies into freshly grated parmesan.

Crispy Parmesan Cauliflower Steaks
Ingredients
- 1 cauliflower head
- 1/4 cup olive oil
- 2 tbs grated parmesan
- 2 cloves garlic
- 1/2 tsp each paprika, onion powder + salt
- 1/4 tsp chili pepper flakes
- 1/2 cup freshly grated parmesan cheese
- Optional Garnish: fresh chives, chopped
Avocado Dip:
- 1 avocado, halved
- 2 scallions, rough chop
- 1/2 lime, juiced
- 1 jalapeño, deseeded + rough chop
- 1 tbs olive oil
- 1 tbs grated parmesan (or nutritional yeast)
- 1/4 cup parsely
- 1/3 cup water
- salt + pepper to taste
Instructions
- Preheat your oven to 450°F.
- Dry your cauliflower well and slice in half, then slice those in half to create your steaks. Transfer to your baking sheet pan.
- In a small bowl, whisk together your olive oil, 2 tbs grated parmesan, garlic and spices. Brush the steaks with this mixture front, back and sides. Dip ONE SIDE of the steaks into the freshly grated parmesan and place parm side down on the pan.
- Bake for 10 minutes at 450° F. then bump down the temperature to 425°F and bake for 20-25 more minutes. Time varies with thickness of steaks. Remove from baking tray and serve crispy side up with some fresh chives on top.
Avocado Dip:
- Add everything to your mini food processor and blend until smooth. Taste and adjust if needed.

Everything stuck to the baking sheet, the meal was ruined so we went out for dinner. I actually thought to myself “maybe I should spray the pan but the directions don’t say too, so there must be enough olive oil on the wash to keep them from sticking. I’m sure if I spray the pan they will be too oily and won’t crisp up.”

Made this but omitted the red pepper flakes because I didn’t have any😂. Still turned out great. My vegetarian daughter wanted me to scrape the bits on the pan onto her plate! I used chipotle ranch as a dip and she used mango pepper jelly.
These were delicious! I made them as a side with the turkey burger recipe (also delish). I accidentally put parm on both sides but that didn’t matter. The bottom was still crispy and yummy. I followed the oven directions to a tee and they came out great! The avocado dip was very good. I didn’t have lime juice, but I used lemon and it was still flavorful and creamy. All your recipes have been so good! Thank you!

Followed the recipe exactly. Greasy cauliflower with cheese stuck to the pan. Would never make again.
This recipe is absolutely delicious!. I didn’t have time to make the avocado dip and I added mozarella on top of the Parm. My family loved it! This will definitely be a staple in our home.

My cauliflower is presently in the oven. Can you help me a bit with cutting it for next time? Do you leave the core part on? I tried to cut a little off thinking that core part would not be tender, and most of the florets separated. Thanks!
I don’t know how anyone cuts a cauliflower into slices. You all must have huge cauliflowers. I ended up cutting into florets, mixing all the parm into the oil mixture, and tossing the florets with it. I skipped the dip as I didn’t have a dip worthy steak. It’s delish though.

Delicious! No sauce needed and I wish I’d used less oil because I actually added some, not realizing that the cheese was pretty greasy after melting.
Still VERY yummy but next time I will spray the parchment paper/ baking sheet and use the recommended amount of oil but not more. I actually used shredded Parmesan and not grated, turned out great! I had the huge bag of shredded parm from Trader Joe’s and I wanted to use it up.
Definitely making this again. Harder to cut the steaks than I thought but going to practice, since it was so tasty. I had to give myself grace around cutting perfect “steaks” LOL.

How do you keep the cauliflower from falling apart?
Hi Shelly, make sure you don’t cut the stem. Also cut first in half and then the steaks.
