Crunchy Zucchini Pops

A healthy hearty zucchini recipe perfect for your next get together or dinner.

Lets enjoy summer as much as possible and these veggie pops are the ideal recipe to do so! They are really easy to make just don’t forget to sweat them out and dry them well – this process ensures they become crunchy.

No need for extra oil and a messy frying pan situation, just set your oven or your air fryer and cook until golden brown and beautiful. I love to use my Lazy Tzatziki with these guys but you can use any dip like Ranch dressing etc.

Crunchy Zucchini Pops

Ingredients 

  • 3 large zucchini, sliced in half then quartered
  • salt
  • 1 cup breadcrumbs
  • 5 oz parmesan cheese, fine shreds
  • 1 tsp dried oregano
  • 1/2 tsp each garlic powder, onion powder, paprika
  • 2 eggs, lightly beaten
  • 1/3 cup tapioca flour (or corn starch)
  • olive oil spray
  • Optional Dip: Lazy Tzatziki

Instructions

  • Preheat oven to 425° F. or your air fryer to 400°F. Line your baking sheet with parchment and spray it with olive oil.
  • Sprinkle the zucchini pieces with salt on the flesh side and let them sit for 10 minutes to sweat them out. Then wipe and dab them aggressively with paper towels to remove the salt and moisture.
  • In three separate bowls, house in one the tapioca flour, in the second the eggs and in the third, whisk together the breadcrumbs, cheese, oregano, garlic powder, onion powder, paprika and salt and pepper to taste.
  • Dredge the zucchini first in the tapioca flour, then the eggs and lastly the breadcrumb-cheese mixture. Transfer them to your baking sheet and spray them with olive oil. Bake until golden brown – about 20-25 minutes.
