Easy Roasted Cabbage Salad
We couldn’t get over how delicious this roasted cabbage salad turned out. All you have to do is chop up a head of cabbage, toss the pieces in some olive oil, salt and pepper, spread them out on a pan, roast for 20 minutes and toss with the dressing. The dressing is next level and deserves its own paragraph…
So this easy yet epic dressing is a combination of olive oil, soy sauce, rice vinegar, Dijon mustard, garlic, freshly grated Parmesan, salt and pepper. This stuff is now going on everything – yes it’s that good. I wanted the whole tray of cabbage to myself.

WOWZA! This was the tastiest thing I’ve eaten all year! For the bacon, I broiled mine with a maple Dijon glaze which really put it over the top! I will definitely be all over your other recipes. Been in a cooking freeze since my mom passed last June. What a beautiful coming out this recipe was. Thank you!
Hi Valerie, I’m very sorry for your loss. May her memory be eternal.
And I’m glad you found the recipe to your liking!
Mmmmm. And a perfect side dish to some sausages!

This sounds delicious. I’m used to weighing ingredients in a recipe. About how much does a “small head of cabbage” weigh?
I just made this and it is delicious! I only used half the cabbage since I will probably be the only one eating it 😉. After tasting I wish I had done the whole thing as now I will likely make it again very soon. Since becoming vegetarian I’m always in the lookout for something different. This recipe is great!
Hi Suzanne, That’s so great! I’m so glad you liked the cabbage recipe! I love it too!
I used Garlic and Basil olive oil to coat the cabbage. I also used 1/2 top of stone ground mustard and 1/2 top of djohn mustard for the dressing. I liked this alot.
Just made this and is so good. Thank you
Can you please specify if the rice vinegar in your recipes is seasoned or unseasoned. Thank you
Hi Linda, it is unseasoned rice vinegar used here!
Oh my goodness. Absolutely delicious. A keeper of a recipe.
Hi Lorilee, i totally agree with you! And thank you for the kind rating!!
Excellent!
I absolutely love this salad. I forgot the parm. but I added sausage and it was delicious too
That sounds delicious with the sausage!
Found this on Instagram. Made it. Guessed ar the dressing measurements because I could see them on I. I used a tad too much Dijon. Even with that the dressed cabbage is wonderful.
And the roasted cabbage. I will NEVER fry it again.
This will be repeated over and over. Many thanks.
Hi Mary, I’m right there with you! This is one of my favorite dishes with cabbage!
This was delicious. I decided to make it because I thought I had bacon. To my surprise, I didn’t but it was still fabulous. Quick, easy and yummy! It’s a winner.
HI Patrizia, glad you tried it and loved it! Thank you for the kind feedback!
Well, that was beyond amazing!
I did add a sliced onion and since my oven is on the fritz I grilled it on the barbecue. Just spread it out on aluminum foil and kept a close eye on it. Wow! Chives were fresh out of my garden. Dressing is delicious. I will definitely be making this again. Thank you!
awesome
Hi Kathy, glad you liked it !!
I’m assuming the parmesean cheese is also part of seasoning before baking but doesn’t say in recipe. Sounds delicious!
i think the parm goes into the dressing that once cabbage is roasted u toss cabbage into the bowl w/the dressing
Easy, fast and soo yummy!!! Hubby and I love cabbage so this was a perfect recipe for me to pair with your parmigiana crusted chicken with lemon garlic butter. I added bacon but I know my vegetarian daughter would love it as is. Great recipe, thanks!!
I made this for Easter dinner and everyone loved it. I was cooking in someone else’s kitchen. It was easy to prepare everything in advance except for cooking the cabbage, then cook the cabbage and toss with the dressing in the host’s kitchen. Don’t skip the bacon-it really makes it!
