Healthy Zucchini Banana Bread (No Added Sugar)
Please not for this recipe: do not ring out the zucchini shreds because the liquid is needed for the recipe. Keep in mind that the batter will be thick when you’re done mixing it. The lemon juice is added to the recipe to interact with the baking soda and help the loaf rise. And of course, you can add in chocolate chips, walnuts or any thing you prefer. You can also add in coconut sugar to sweeten it up a bit. I like to toast my slices and drizzle with honey or maple syrup.

Healthy Zucchini Banana Bread
Ingredients
- 3 ripe bananas, (1½ cups mashed)
- 1 cup shredded zucchini
- 2 eggs, lightly beaten
- 2 tsp vanilla extract
- 1 tsp lemon juice (or vinegar)
- 2 cups rolled oats (processed into flour)
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat your oven to 350℉. LIne a 9×5 inch loaf pan with parchment paper.
- In a large bowl mash your bananas and then add in the zucchini shreds (do not ring out the liquids), eggs, vanilla and lemon juice – mix to incorporate. Next add in the oat flour, baking soda, cinnamon and salt and do a final mix to combine. Transfer to your loaf pan and bake for 50 -55 minutes or until toothpick comes out clean. Check the loaf at the 35 minute mark and loosely throw over a piece of aluminum if the top is getting too tan.
- Once its out of the oven, let it sit in the pan for 20 minutes and then transfer to a wire rack to cool for another 20 minutes prior to slicing.
Loved it. Due to an error on my part, I mistakenly added 1 more cup of shredded zucchini. Also meant to add 1/2 cup cut raisins and 1/2 just because I like those in quick breads. It was good. So grateful finding this recipe as I no longer eat refined sugar and white flour. Thanks Stella Drivas!
Can I use whole wheat flour?

I have made this recipe twice now and cannot rate it high enough. I have to watch my glycemic numbers and a lot of times even recipes without sugar are too high for me (or, aren’t good at all). This recipe is awesome! I didn’t have rolled oats or oat flour so I substituted steel cut oats which I wasn’t sure about but it was incredible! The first time I made it, it seemed like it could use a touch more salt so I increased to 1/2 tsp the second time … might need to be somewhere in between. But overall—this was a huge hit. Especially love a slice toasted in the air fryer with butter — yum.

I made this yesterday and we love it. It says the calorie count is 99k. I looked that up and it’s a thousand calories! That can’t be right so what is the count for each slice of there are 8 slices.

That doesn’t sound incorrect for the calories of a whole loaf. Just divide 1000 by 8 for each slice’s calories. under 200/slice is not very high for a baked good
I followed the recipe to the letter and unfortunately it came out really soggy 🙁
I have made this recipe twice now and both times I could not get the loaf to cook through. The first time I used frozen bananas and thought perhaps I didn’t drain enough liquid out. The second time I used fresh older bananas and the uncooked layer was even thicker! For both instances I cooked the loaves at least an extra 30 minutes and still no luck. I don’t understand why it won’t work. Super disappointed as the cooked part is delicious!
Looks great, can I substitute grated carrots for zucchini? Want to make it soon and have everything but the zucchini. And, yes I can imagine some Lily’s mini dark chocolate chips and maybe toasted walnuts folded into the batter.

Im sorry almond flour would not work without a bunch of alterations. Definitely more eggs and also coconut flour

Can I use OAT flour instead of processing rolled oats myself? If so is 2 cups OAT flour equivalent to 2 cups rolled oats?
HI Donna, yes you can definitely use oat flour but I would use 1 1/2 cups oat flour. And keep in mind the batter should be thick, not runny.
