Low Carb Chicken Broccoli Alfredo Bake
A delicious creamy dinner with a secret boost of protein coming from the creamy sauce!
You can enjoy chicken alfredo any way you like it but my favorite is low carb with broccoli and a creamy high protein sauce. Whenever I make it the family devours it!
This can be a one pan meal if you use rotisserie chicken from the market or Costco. If you like this recipe you will love my Low Carb Chicken Zucchini Bake or my Creamy Cauliflower Alfredo Pasta Sauce.

Chicken Broccoli Alfredo Bake (Low Carb)
Equipment
Ingredients
- 1½ lbs chicken breasts, cubed
- onion powder, garlic powder, salt to taste
- 2 tbs olive oil
Alfredo Bake:
- 1 lb broccoli, cut into small florets
- 8 oz alfredo sauce (see Notes below for homemade version)
- 1 cup cottage cheese, drained
- onion powder, garlic powder, salt to taste
- 1½ cups shredded parmesan cheese
- 1½ cups shredded mozzarella cheese
Instructions
- Preheat your oven to 375℉ Lightly spray or grease a 9×13" baking dish with olive oil.
- Add your cottage cheese to a small food processor to whip smooth. Mix the cottage cheese with your alfredo sauce and the garlic powder, onion powder and salt to taste.
- Toss your chicken cubes with onion powder, garlic powder and salt generously. Heat the olive oil in a large skillet on medium high. Add in the chicken and cook until golden brown on sides. Remove from heat.
- First add the broccoli florets to your baking dish evenly spread out. Next layer on the chicken pieces evenly. Now spread out the shredded parmesan cheese. Now the alfredo cottage cheese sauce and lastly sprinkle on the mozzarella cheese evenly. Bake for 35 minutes – you may need to broil it for a minute or two to get it golden brown on top.

Homemade Alfredo Sauce for this Recipe:
Ingredients:
- 1/4 cup butter
- 3/4 cup heavy cream
- 1 large clove garlic, minced
- 1/4 tsp Italian herb blend
- salt and pepper to taste
- 1 cup freshly grated parmesan cheese
- In a medium pan, heat the butter and heavy cream. Stir in the garlic and seasonings for 1 minute. Lastly whisk in the grated parm until melted and combined. Taste and adjust if needed the salt and pepper. Serve immediately.

I suspected that someone is using your videos in a copycat account on FaceBook, as “Healthy Recipes” and they are about to be taken down for fraud, so I wanted to find you before losing contact. I googled “Now love your life” and found this website! Phew! I have been told by my doc that I am pre-diabetic (57M, 270 lbs) so I’m looking forward to exploring your recipes for plant-based yumminess, even though I’m a diehard meat and potatoes man. Those fake accounts are a pain in the butt on Facebook. I’ve contacted them many times to remove my videos from their pages but nothing ever seems to change. Btw, I’m also a meat and potatoes person myself! My advice that my parents and grandparents have given me is to stay away from processed foods and stick to whole foods! I thought my husbands might not like all the pesto but he loved the recipe. I left out the salt as I used canned pesto which had enough salt in it. I served it over whole wheat spaghetti and spooned the excess pesto on it. I will be making this recipe for my son and his family. They eat a lot of chicken and I think they will love it. As I was prepping the meal, I was worried that the amount of cheese would make the dish way too rich, but I was wrong! It was the perfect balance! The broccoli really helps offset the cheese. Tons of flavor and so easy to make! Thanks for sharing!

was disappointed with this recipe as it took longer to fix because of mixing the Alfredo sauce with the whipped cottage cheese and spices, but more so because of the ton of dishes for clean up…the sauce was too thick to spread on top of the chicken and the broccoli did not get quite done enough even after 35 minutes…a person having difficulty chewing would not be able to manage…taste was okay but not sure this one is worth the 700+ calories…

Made this tonight with leftover turkey. Was worried the meat would be dry…Nope. Everything was delicious & juicy. Thx for another winning casserole. Next time I’ll try it with your homemade cauliflower Alfredo sauce and maybe use riced cauliflower to spoon it over and soak up the delicious sauce👅❣️

i haven’t found a recipe that we haven’t like. hubby isn’t a fan of broccoli but he loved if. i added mushrooms for a little extra. i also doubled the sauce. sinc emy Alfredo we is a 16 oz jar.

Qt-do you have a homemade Alfredo sauce recipe to substitute for the 8oz needed in this delicious looking dish? Yo Mama’s is pretty expensive and can only be bought online in my area. I have tried other brands and they taste too fake to me. Thanks! LOVE so many of your recipes!
