Low Carb Chicken Nuggets
A delicious take on fast food that’s way more delicious, healthier and easy to throw together.
We couldn’t stop eating these nuggets. First of all, as with all of my recipes, this is so easy to throw together. Secondly, YOU DO NOT MISS THE BREADCRUMBS at all. I promise you. They taste like they have the breadcrumbs. I really hope you try them because you will love them and especially the dip is our fast favorite with fries and these nuggets.

Low Carb Chicken Nuggets
Ingredients
Chicken Nuggets:
- 2 lbs ground chicken
- 2 eggs
- 1/3 cup grated parmesan cheese
- 1/2 cup shredded mozzarella
- 3/4 tsp each garlic powder, onion powder + paprika
- 2 tsp salt
Coating:
- 1/2 cup grated parmesan cheese
- 3 tbs potato starch (or tapioca starch or corn starch)
- 1/2 tsp paprika
- 1/2 tsp dried parsley
Spicy Ketchup:
- 1/4 cup ketchup
- 1/2 tbs Worcestershire sauce
- 1 tsp Sriracha sauce
Instructions
- Preheat oven to 425° F. Line a large baking sheet with parchment paper.
- In a shallow bowl, combine the Coating ingredients with a whisk.
- In a large bowl combine the Nuggets ingredients with you hands until just incorporated. Form your nuggets into small or medium flat ovals; I dropped meat clumps into the coating mixture and then formed the oval shapes and then flattened them on the baking sheet. Spray the tops of the nuggets with olive oil. Bake for 15 minutes then flip. Bake for 10 more minutes. Time varies with the size of your nuggets. I formed medium sized nuggets (not too small). Keep in mind they shrink when baked. Mine took a total of 25 minutes to cook.

Sooo delicious. But me & the parchment paper don’t get along! Lol
How many nuggets are in a serving size? Are you doing it by ounces like 1oz per nuggets? Is that nutritional facts the entire meal, all the nuggets made from the 2lbs?
I made them exactly as described. They’re really delicious. it would be really helpful if there was a size (by inches) or measurement of the raw nugget before cooking. For 2 pounds of ground chicken, we made a lot more than 24 nuggets. So, six servings at 4 nuggets each seems off?
Thanks so much for the delicious recipe.
I used egg white protein powder instead of any starch and they came out perfect. Crunchy and light.
Tasty! But 2 teaspoons of salt was too salty IMO.
Yum! I was skeptical but now I’m HOOKED! Looking forward to trying more of your recipes.
Thank you!

HI Denise, Thanks so much! This recipe makes 24 nuggets and the Nutritional info is for 4 nuggets. I hope your grandson enjoys them!!
At first I thought they were not turning out the way they looked in the oven. I baked for 10 min and air fried for 10 minutes. They were really good everyone liked them. I tried some with regular bread crumbs and they were not as good. I will make them just a little smaller next time.
HI Becky glad you liked the nuggets in the air fryer – thank you for sharing your feedback with us!
These were delicious! Everyone loved them. I’ll be making them again and freezing to have on hand. Can’t wait to try your other recipes!
Hi Lisa, so happy they were enjoyed by ALL! Thanks for the rating too!
This recipe looks amazing…..wondering if you’ve tried swapping the cheese for breadcrumbs for the coating mixture?
I’d like to make them for my toddler who is not gluten free.
Hi Maddy, sure you can use breadcrumbs!
can I use almond flour instead of potato starch?
Hi Doreen, i would sub in corn starch, tapioca starch, arrowroot powder OR all purpose flour instead of the potato starch!
Sounds great, will try w/o ketchup. Any suggestions for locarb replacement for potato starch??
arrowroot powder, tapioca powder, or corn starch
If I have none of those around, will it be ok without?
hi, the nutrition information.. am I right in assuming that is for 100g of these nuggets prepared as per the recipe? thanks 🙂
