No Bake Peanut Butter Greek Yogurt Bites

My family and I really enjoyed this easy to make, no bake dessert. You can get all your sweet cravings satiated through this delicious and healthy treat!
You can sub in any smooth and creamy nut butter you prefer here. For the sweetener, you can use maple syrup or honey. You can skip the peanuts or sub in some crushed cashews or walnuts too. I highly recommend the flakey sea salt though!

No Bake Greek Yogurt Bites
Ingredients
- 1 cup Greek yogurt
- 1/2 cup peanut butter (or almond butter)
- 1/3 cup honey (or maple syrup)
- 1/3 cup peanuts
Chocolate Layer:
- 1⅓ cups chocolate chips
- 2 tsp coconut oil
- flakey sea salt
Instructions
- To a large bowl, add the yogurt, nut butter, honey and mix to incorporate. Take a cookie scoop and scoop out about 3 tbs of the mixture onto a parchment lined half baking sheet. Use the back of the spoon or scooper to smooth out the top so that they have a cookie shape. Place 5 peanuts on top of each 'cookie' and freeze them for 2 hours.
Topping:
- In a small pot, melt the chocolate chips with the oil on low heat, stirring constantly, until smooth and melted. Working quickly, dip each yogurt cookie into the melted chocolate (or drizzle the tops with the melted chocolate). Sprinkle on some flakey sea salt and place back into the freezer for another 20 minutes.
- Store leftovers in the freezer in an air tight container.

Hi Francine any neutral flavored oil will work here… like olive oil, avocado oil
