One Pot Balsamic Greek Chicken ‘Salad’
The quickest and easiest way to make your chicken salad dinner super juicy and flavor packed.
One of my all time favorite recipes to impress with no fuss for the chef, is this dish. The balsamic honey with the feta is a beautiful combination that produces a gourmet tasting dish.

One Pot Balsamic Greek Chicken ‘Salad’
Ingredients
Salad:
- 7 oz feta cheese, rough crumble
- 8 oz cherry tomatoes, halved lengthwise
- 1/2 cup Kalamata olives
- 1/4 cup fresh oregano
Balsamic Dressing:
Chicken:
- 1 tbs olive oil
- 3 chicken breasts,
- salt, onion powder, garlic powder + dried oregano
Instructions
- Preheat your oven to 350°F.
Salad:
- In a medium bowl, combine all of the ingredients and mix.
Dressing:
- In a medium bowl, whisk together all of the ingredients.
Chicken:
- Pat your chicken dry and season both sides liberally with salt, garlic powder, onion powder and oregano.
- In a large oven safe pot, heat the 1 tbs olive oil on medium high. Add in the chicken peices and sear until golden on each side, about one to two minutes per side. Add in the Balsamic dressing and then top with the feta salad – spread it out. Transfer pot to your oven and bake for 20 minutes.

Extremely delicious and easy to make! I tried it basmati rice and pasta. Personally like it more with the rice pairing.

This was AWESOME 10/10! I added roasted red peppers also which added a little punch of flavor. Super easy to make too. I was having a lazy day and this was the perfect lazy & healthy meal!!!

This recipe is delicious. A great medley of flavours. Sometimes I find balsamic to be a little overpowering but this balanced out nicely. The only reason I give this 4 stars is because it’s a little soupy. This may be my problem but I found the finished product to be tasty and yet very watery. I had some fresh baguette slices that I used to soak up the juices at the end. Regardless, LOVE the taste and would recommend this! Also open to hearing how I could avoid the soupy-ness or add something to help soak it up!
