One Pot Balsamic Greek Chicken ‘Salad’
The quickest and easiest way to make your chicken salad dinner super juicy and flavor packed.
One of my all time favorite recipes to impress with no fuss for the chef, is this dish. The balsamic honey with the feta is a beautiful combination that produces a gourmet tasting dish.

One Pot Balsamic Greek Chicken ‘Salad’
Ingredients
Salad:
- 7 oz feta cheese, rough crumble
- 8 oz cherry tomatoes, halved lengthwise
- 1/2 cup Kalamata olives
- 1/4 cup fresh oregano
Balsamic Dressing:
Chicken:
- 1 tbs olive oil
- 3 chicken breasts,
- salt, onion powder, garlic powder + dried oregano
Instructions
- Preheat your oven to 350°F.
Salad:
- In a medium bowl, combine all of the ingredients and mix.
Dressing:
- In a medium bowl, whisk together all of the ingredients.
Chicken:
- Pat your chicken dry and season both sides liberally with salt, garlic powder, onion powder and oregano.
- In a large oven safe pot, heat the 1 tbs olive oil on medium high. Add in the chicken peices and sear until golden on each side, about one to two minutes per side. Add in the Balsamic dressing and then top with the feta salad – spread it out. Transfer pot to your oven and bake for 20 minutes.

This recipe was absolutely delicious. Made it last night. Super easy and so so scrumptious and addicting. I halved the balsamic and added 1/6 cup lemon juice. Perfection. We cut up the moist chicken and spooned everything on fluffy pita bread. I am a fan now and can’t wait to make more of your dishes.

OMG this is sooo good! Seriously good. The only thing I changed was I used chicken thighs, as that was all I had and I let it cook about 4 or 5 minutes longer. I could drink that dressing and the cherry tomatoes and fresh oregano is stunning! Thank you thank you. This is going to be my go-to every week.

This was incredible!!! Added a splash of lemon and a few artichokes. Definitely will make again. May only use 2 TBsp of honey.

made this with one amendment,added 2/3 lemon juice and 1/3 balsamic instead of all balsamic to the dressing…what a fantastic dish!!
This was absolutely incredible! Only change I made was subbed 1/4 cup capers for the olives purely due to taste preference. This will be on permanent rotation here.
