Quick Apple and Oat Muffins
I cannot express to you how delicious and yummy these muffins are. Beyond the fact that they are sugar free, flourless and nutritious. All of the ingredients come together to give you a beautiful texture and taste.
We all know you have that fall season apple bag sitting on your counter. And you’re like me, wondering what you’re going to do with all these apples. Well, I got you covered!
The beautiful part of this recipe is that you probably already have all of the ingredients on hand. And they all get prepared in one place: your blender or food processor. So simple to clean up. The coconut shreds are totally optional; you can leave them plain and they will still be hella delicious naked. Or try some butterscotch chips if you wanna get wild.

Quick Apple and Oat Muffins
Ingredients
- 2 cups rolled oats
- 8 medjool dates, pitted
- 1/2 cup olive oil
- 1/4 cup maple syrup
- 2 apples, cored + grated
- 1 tsp baking soda
- pinch salt
- 2 eggs
Instructions
- Preheat your oven to 350° F. Spray your muffin tray with coconut oil or use muffin liners.
- Combine all the ingredients in your blender or food processor. Blend until a smooth yet chunky batter forms.
- Transfer batter to your muffin tray (add toppings now if using). Bake for 15-18 minutes; tops will gently spring back when pressed in.
- Allow to cool 15 minutes in pan before removing.
Moist, perfect on-the-go breakfast options. Made these 5 times and my family devours it!

Can you just mix everything in a bowl instead of a blender?
Loved these! I used a mix of raisins and dried cranberries instead of the dates, and a little less oil and a little less maple syrup, and they came out great. Left out the salt. Also added some cinnamon and freshly grated nutmeg. It made 24 mini muffins (filled each muffin space full to the top), and was so easy. Thanks so much!
Yummy! To reduce the carbs & calories a little, I made these with only 1/3 cup olive oil, 1/2 cup raisins and 1/4 cup dried cranberries (instead of the dates), 3 tablespoons maple syrup, no salt, and a little nutmeg. This made 24 mini muffins, and by my calculations each muffin had 84 calories, 11 carbs, 3.8 grams fat, 1.5 grams protein, 7.1 mg sodium, and 1.1 g fiber.
It has become my favorite breakfast. Time after time, it is always perfect. Thank you!

Looking forward to making these along with your flourless pumpkin muffins—which are a staple in my recipe rotation =] …I’m a lover of all your recipes!!! I was wondering is there any downside to making the batter ahead of time, putting it in fridge overnight, and baking the next day?
Nice and moist however I found them a bit bland, even adding 1/2 tsp of salt. Next time I would add cinnamon and/or vanilla and maybe some chopped walnuts.
These are the easiest and yummiest muffins ever! And I had all the ingredients on hand. My 3 year old also gave them the thumbs up, so thanks for sharing 😊
Delicious, but expect to spend more than 15 minutes prep time. I use an apple pealer / corer instead of grating the Apple.
Didn’t love. Instead of a sweet, cozy traditional muffin, it tasted more like a healthy diet muffin.
