Quick Applesauce Blueberry Bread

- 1 cup unsweetened applesauce
- 2 eggs
- 3 tbs olive oil
- 1/2 lemon, zested
- 1 tsp vanilla extract
- 1¼ cup flour
- 2 tsp baking powder
- pinch salt
- 2/3 cup sugar
- 1 cup blueberries
Instructions
- Preheat oven to 350℉. Line an 8×4 inch loaf pan with parchment paper.
- In a large bowl, add in the applesauce, eggs, olive oil, lemon zest, vanilla and mix until combined. Next, add in the flour, baking powder, salt, sugar and mix until incorporated. Then fold in the blueberries. Transfer to the loaf pan and spread out evenly. Top with more blueberries. Bake for 40-45 minutes or until toothpick comes out clean.
