Spanakopita Spring Rolls
Another spin on the Greek flavor classics. These are adorable and perfect for your next get together, game night or the upcoming holidays.
The spring rolls are super easy to work with and these were so much fun to make. Make sure you rough chop your baby spinach. Saute the scallions and spinach quickly and make sure you pat it dry if it visually looks too oily.
The rest of the process is easy. Make sure you spray the rolls before your air fry them to get that golden color. Watch them in the air fryer, they can burn at the end since the spring roll paper is thin. FYI: You can probably sub the breadcrumbs with almond flour to make these gluten free.

Spanakopita Spring Rolls

Ingredients
- 1 tbs olive oil
- 2 scallions, chopped
- 5 handfuls baby spinach, rough chop
- salt and pepper to taste
- 1/4 cup dill, chopped
- 4 oz feta cheese, crumbled
- 3/4 cup mozzarella, shredded
- 1 egg, lightly beaten
- 1/3 cup grated parmesan cheese
- 1/3 cup breadcrumbs
- 12 spring roll wrappers
Instructions
- Heat your oil in a large skillet on medium. Add in the scallions and saute for 1-2 minutes. Add in the baby spinach (may have to work in two batches) and saute until just wilted. Season with salt and pepper to taste. Remove immediately from pan and allow to drain.
- In a large bowl, combine the spinach mixture, dill, feta and mozzarella until incorporated.
- Set up your work station, with the beaten egg in one bowl; the parmesan cheese and breadcrumbs mixed in a separate shallow bowl and a large plate with water to soften your spring roll sheets.
- Start off by submerging a spring roll wrapper completely in the water bowl for 10-15 seconds. Remove, pat dry and add 3 tbs spinach feta mixture on one side and just roll over, tucking in the sides as you roll. Dip the rolls first in the egg (allowing excess to drip off) and then dredge in the parm-breadcrumb mixture. Preheat your air fryer to 375° F. Working in two batches, spray your rolls with olive oil and air fry for 7 minutes or until golden in color. Remove and sprinkle with chili pepper flakes.
These are amazing so quick if you don’t have something to eat great quick supper with a salad

don’t lnow what i did wrong, mine were kinda floppy afger the 7minutes so i flipped them and did another 7mins. didn’t burn them. some kinda oozed out from the end or middle but still so tasty. I also only made about 8 from the recipe.
Apparently, spring roll wrappers come in a variety of sizes. Which size did you use?

Hi Carol, I would make them same day. I’m not sure how the rice paper will hold up overnight.

These sound very good. I read the comments but have two questions:
1. Can a regular egg roll wrapper work?
2. I don’t have a convection oven or air fryer. How else would I be able to make them?

These look amazing, can’t wait to try them! Is there a way they could be made ahead of serving? Should I fully prepare them, including cooking, then freeze and reheat? Or could they be frozen in the rice wrappers then breaded and cooked after defrosting? I’d appreciate any input you might have. Thanks!
omg!!!! Aaaamazing!! I’m a terrible cook. I get zero pleasure from it but you inspure me. I made these with gf crumbs because I have celiac and I feel like I just had a spanakopita!!! The wrappers you use in this recipe are rice spring roll wrappers and are treated differently from the regular spring roll wrappers, which do not have to be soaked in water.
I didn’t realize you had to wet the spring rolls lol! first one was a mishap but other than that they were delicious

Yes you could just still spray in with olive oil
Oh my goodness, these are delicious! I was so excited to try this only to realize I was out of spinach but had a beautiful head of kale and subbed that and it was amazing! The second time I went to make them, I was out of spring roll wrappers. No worries, I whipped up a quick pizza crust and put the yummy filling right on top with a little extra cheese. Might have been the best pizza ever! Thank you for this recipe, can’t wait to try more of your lovely ideas!!
These are absolutely phenomenal. I like them more than regular spanakopita! I was unable to make 12, but with the same measurements and following the instructions I made 7. So so delicious. I love this recipe. I will be making them again and again.
