Flourless Banana Oat Muffins
The ideal grab and go breakfast!
The simplest of recipes to throw in your blender and mix up. Bake and your ready to go for a yummy and flourless breakfast or snack. I know you have some brown bananas on your counter right now. You can still make these without a blender or food processor. Just buy some oat flour and mix all of the ingredients in a bowl.
I typically make these without any add ins, just plain banana bread style. However, feel free to add in chocolate chips, walnuts, raisins, sunflower seeds, etc. They are healthy and nutritious.
Flourless Banana Oat Muffins
Ingredients
- 3 small bananas, ripened
- 1/2 cup oats
- 1/3 cup almond flour
- 3 tbs honey (or maple syrup)
- 1/4 cup peanut butter
- 1 egg
- 1/2 tsp baking soda
- 2 tbs flax meal
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat oven to 375 F. Spray your muffin liners with non stick spray.
- In a food processor or blender, combine all of the ingredients until smooth and no more whole oats are visible.
- If you’re adding in chocolate chips, mix them in with a spoon now.
- Fill muffin liners 3/4 way full. Bake for 12-15 minutes. Allow to cool in the pan for 15 minutes prior to transferring to a cooling rack.
Notes
Optional Add Ins: Nuts, seeds, raisins or plain without anything.
This is a super recipe. We eat them as treats or dessert, but great with coffee in the morning too.
Can you substitute egg with egg whites?

Question, I don’t have a muffin tin so I would use a loaf pan to make this, how much time and would that need to bake? And what temperature?
Hi Laura, you can do 350 F for 50 minutes or until toothpick comes out mostly clean. Enjoy!
can I leave the peanut butter out
These are easy and good. I made 1/3 with carob, 1/3 blueberry, and 1/3 strawberry to appease my family and their differing tastes. 😂 Added a few more cooking minutes to the muffins with the fruit. Thanks for sharing.
