Baked Zucchini Egg Tortilla
I am in love with this little creation. Its super cute in presentation to serve to your guests or just for you. And if you don’t finish the whole thing just store the leftovers in your fridge and have it the next day, warmed up.
I definitely recommend making this with a shallot. You can also use an onion as a substitute though. You can beat your eggs or just plop them in the pan. They will take a few minutes longer to set when you’re baking though. For cheeses, I am apt towards feta cheese, but you can use anything you have on hand or prefer. Make sure you top yours with chili pepper flakes for that little kick!

Baked Zucchini Egg Tortilla
Ingredients
- 1 tbs olive oil
- 1 small shallot, sliced thin
- 1 small zucchini, sliced thinish
- salt and pepper to taste
- 1 large tortilla (burrito size)
- 2 eggs, beaten
- 2 oz feta cheese, crumbled
- 1/4 cup shredded mozzarella cheese
- chili pepper flakes and basil to garnish
Instructions
- Preheat your oven to 400°F. Spray an oven safe (8 inch) pan lightly with olive oil. Place your tortilla in your pan and press down so that the edges are coming up the sides.
- In a medium pan, heat your olive oil and then saute your shallot for 30 seconds and then your zucchini until golden. Season with salt and pepper to taste.
- Pour the eggs into your tortilla pan and season them with salt and pepper to taste. Add in the zucchini and spread out evenly. Top with your feta and mozzarella and bake for 18-20 minutes or until set and golden brown on top.

This is my new favorite breakfast. I’m gluten free so I use a smaller spinach tortilla wrap and it turns out so great. I add an extra egg and it makes such a low calorie high volume breakfast.

Looks yummy and easily adaptable to any veggie. I’m gluten-free and wondered if you tried with several smaller corn tortillas (or the largest ones you can get)…maybe spray them with olive oil to help them crisp up???
Hi Melanie, I ‘m a little concerned with corn tortillas holding up – in my experience they tear quite easily…. But its worth a try!

I love this recipe ! It’s so good ! I made this at least three times already and the last time I made it I didn’t have mozzarella so I was like shoot. So anyway used a bit of shredded cheddar and then diced to put in a little of sundried tomatoes too. I just love it and feel like just as written or add /change if needed to based on what you have the recipe is just delicious. I had to stop myself with eating half so I could save the other half for my lunch> Thanks for all the delicious recipes!
What can I use in place of feta?? Just can’t get it past my lips….LOL
Hi Joanna any cheese works. You can just use mozzarella and leave out the feta OR sub in cotija cheese or parmesan or goat cheese! Enjoy!

I’m on the keto diet so low carb tortilla’s were used but it didn’t taste any less than amazing! The basil and red pepper flakes were perfect topping. Now I’m wondering what else I can put in there, sausage and red sauce for a mini low carb pizza???

I’ll bet that this would be good in an air fryer. We got one recently and it doesn’t heat up the kitchen like the oven does. I think that it would bake more quickly and in a similar way.
