Baked Zucchini Sticks (Gluten Free)
These are not for sharing. Or you can double the recipe to make things fair. I eat these for movie night with a nice squeezing of lemon. I don’t even need a dip. Although a delicious yogurty Tsatziki is a duly welcomed addition.

Ingredients:
The simplest of recipes sometimes produces the greatest of results. All you need for this yumminess is two zucchinis, olive oil, cheese, corn meal and spices. I added some paprika, onion powder and garlic powder.

substitutes:
Any cheese will work with this recipes. Just make sure it is grated and in small crumbles. If you don’t have corn meal, you can use corn starch or regular all purpose flour. You can even use bread crumbs or almond flour.

Zucchini Sticks
Ingredients
- 2 zucchinis
- 3 tbs olive oil
- 3 tbs Parmesan cheese, grated
- 3 tbs corn meal
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- salt to taste
- serve with lots of lemon
- Dip: Lazy Tzatziki
Instructions
- Preheat oven to 420°F. Line a baking sheet with parchment paper.
- Slice your zucchini into sticks – not too thick and not too thin. Transfer to a large bowl and add in the oil. Stir to coat everything well. Next add in the cheese, corn meal and spices. Toss again to coat all. Transfer to your baking sheet and spread out (its best if they don't touch). Bake for 25 minutes or until crispy. Serve hot with lemon wedges.
It was very enjoyable in my opinion. Definitely a delectable food option for losing weight.

Hi Alia, you definitely need to make this!
Great recipe, quick and easy
Hi Jena! Thank you for the feedback – glad you enjoyed!!
On TikTok you said cornstarch and your recipe calls for cornmeal..which is it
Hi Lise, in the video it says corn meal…please check again
First time here, gonna try it tonite! Your recipes are Amazing !!
Hi Sobhan! Thank you so much for the kind message! Hope you love every recipe you create!
1st of your recipes I tried and I loved it we’ll try them all they’re great and healthy, used no salt just a bit of mrs dash
Hi Susan! Love the Mrs Dash sub in! I will try it next!
Great taste! Unfortunately the sticks didn’t get crispy, don’t understand why, followed the recipe.
Hi Fleur! Every oven is different.. maybe try increasing oven temp to 420F next time! Hope this helps! Cheers!
It also helps if you cook them on a baking rack
Hi Jane, great tip! Thanks for replying!!
Air frier works best and I double coat with a egg wash sometimes makes then crispier
I can’t wait to make these! It says it makes 2 servings, are the nutritional facts per serving or for the whole recipe?
Thank you!
Hi Heidi! The nutritional facts are for 2 servings! You’re gonna love them!
Not a great recipe. Zucchini is soggy! Perhaps salt zucchini sticks first to remove excess water?
Hi Julie, sorry the recipe didn’t work for you. That could definitely work..
Happened to me too cuz I put too many on the pan at once. But I took off the ones that were done, spaced out the remainder and back in the oven. I kept removing the ones that were done and putting the rest back in. The pan made a few rounds back in the oven, but while the stix were finishing up cooking, I sat down and ate the ones that were done. I’ll know next time: space them out good, cut them thinner
Hi Jenny, thanks for sharing your tips with everyone!
I just found gluten free Pango breadcrumbs. Will they work for this recipe? (And how?!)
Hi Penney! Yes those will work same as the regular panko!
Would panko work instead of corn meal?
Hi Andrea, Absolutely you can sub that with panko!
Great recipe and very delicious thank you🌸
Hi Nalan! Glad you liked them! Thank you for writing the review!
I’m the oven now – can’t wait to try them
Hi Kathy! I hope you enjoyed them!!
Couldn’t wait to try this, and you WON’T wanna share! I used three small zucchinis so I would have a little to share, but nope! I ate them all. Stella’s right! Delicious dinner!!!
Hi Jenny! hahahaha right! they are too good to share!! Thank you for taking the time to rate and your feedback!
I got my toddler eating zucchini! That says enough 😉
Hi Adriana, That’s one of the best comments on here lol! Glad the little one enjoyed them <3
Simply delicious! 10/10
I did tweak the receipe a little for those looking for a bit more spice: I added a few chilli flakes, and fresh ground pepper. I used panko and reduced the olive oil to 1.5 TBS and I didn’t have lemon so I added a few droplets of lime juice before I put them in the oven!
I baked it at 425 degrees for 20 minutes! Thank you for sharing your receipe Stella!
Hi Anushiya! Thank you so much for that rating and the alterations to give ideas to other readers! All the best to you!
Hi there! Going to try this recipe tonight with some grilled fish and wild rice. CAN’T WAIT! They look delicious! Only thing I was wondering: my guy can’t have gluten OR dairy – would nutritional yeast work in place of the parmesan cheese? Tried finding lactose free parm but both my local stores were out. Hoping these will still turn out without the cheese, but thought I’d ask first.
Thanks so much! GREAT site!
Jess
Hi Jessica! Thanks so much! I haven’t tried it with nutritional yeast. But in my opinion, that should work as a vegan option! I hope it worked out for you guys!
I made these in the oven and they’re great but I wish they were crispier so I broiled them at the end.
Now I’m obsessed so I actually just bought an air fryer (which I’ve never used before).
Do you know what temp and how long in an air fryer? I assume I’m meant to use much less oil (perhaps spray oil).
Thx!
Hi Marci! Oh congrats on the new purchase!! I would do them at 400 degrees F for 10-12 minutes or until crispy. Flip them half way thru if possible. And yes. I always spray them with olive oil once theyre in the basket. Let me know how you like them and enjoy!!
Made them tonight finally and they came out tasty 🙂 Thanks for a yummy recipe.
Hi Chris! My pleasure! Glad you liked them!!
i loved it. the flavor was amazing and we forgot the lemon so im excited to try it again. I will say they were not crisp so I will try frying and baking to see how that works. But really good inspit of…
Hi Jeannie! Yes, some zucchini are more liquidy than others I guess. I suggest sprinkling with salt to sweat them out and then dabbing them well with paper towel to get the water out of em.
I’ve made these a few times now. They are amazing!! I now double the recipe because it is never enough 😂
Hi Yolanda, very smart of you to double the recipe!!
I’m allergic to corn. What can I use in place of cornmeal?
Hi Mia, you can use breadcrumbs.
I just made these delicious zucchini fries. I paired the zucchini fries with your easy chicken gyro recipe. It was a hit!
Excellent
Sliced then salted and let the water sweat out on paper towel for a few hours
Dipped in egg then panko with all the seasoning
Sprayed with olive oil
Cooked in Airfryer
Perfect! I’m glad you enjoyed them and thanks for leaving the feedback with your experience!
making these again today with the last of the garden zucchini. I love how simple, yet flavorful these are! any tips to get them a bit browner without burning?
