Cheesy Cauliflower Steaks
An easy to make, low carb side dish that will deliver in big taste.
If you’re asking yourself why make these cauliflower steaks.. the answer is why not? They are quicker to slice up and easier to prep with the oil mixture. You only have to slice the head three times – make sure its in half first though. They will look adorable on your table or plate next to chicken or real steak lol.
So I had this cauliflower on death’s door and I needed a healthyish snack so this was born. I’m so glad I decided to try this version. They were crispy on the outside and perfectly spiced. I ate mine without cheese and it was amazing aka vegan version.

Cheesy Cauliflower Steaks
Ingredients
- 1/4 cup olive oil
- 2 tbs parmesan cheese, grated
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- salt and pepper to taste
- 1 head cauliflower
- 1/2 cup shredded mozzarella cheese
- optional: fresh parsley garnish
Instructions
- Preheat your oven or air fryer to 400° F. Line a baking sheet with parchment paper.
- In a small bowl, mix the oil, grated parmesan, spices and salt and pepper to taste.
- Remove the leaves from the bottom of your cauliflower and leave the stalk in place. Slice the cauliflower in half. Then slice those two pieces in half to create your 'steaks'. Transfer them to your baking sheet and brush all over (top, bottom and sides) with the mixture from step 2. Air fry or bake until the stalk is fork tender and golden brown, about 15 minutes for air fryer (flip half way through), 20 minutes for the oven. Remove from oven and sprinkle with the shredded cheese. Place back in the oven until melted.

I used slightly too much oil but outside of that it was delicious with shredded carrots and beets salad and ‘I love my life’🙌😊

Do we have to use parchment paper?
I prefer it for less cleanup! But you can skip!
The two rating is because of the instructions. It said parm side down. This doesn’t work as the Parmesan falls off onto the tray and there is need to press the cauli into it. I used a cookie pan lined with foil so maybe my fault because the parm melted into the foil and wouldnt stick to the cauliflower steak. Should have placed parm on top side for easy removal Won’t do that again
Loved the spice combination (used Hungarian paprika) didn’t have mozzarella in the fridge so used only Parmesan. Loved how crisp the parm got! Didn’t make the dip but used fresh raspberries and pear/cinnamon spread to accompany them. My husband wants me to make for Thanksgiving!

I bought the smallest cauliflower at the market and prepared as directed… two of the “steaks” immediately broke into flowerets. The other 2 were evidently too thick and even after nearly 40 min in the air fryer still aren’t ready. Perhaps the avocado dip will disguise the taste of the over-cooked cheese mixture. (New oven, never had problems).
Such an easy recipe and so yummy! I’ll be making this for a crowd today for 🇨🇦 Thanksgiving with 2 heads of cauliflower. I know they’ll love it as much as we did.
