Crispy Carrot Chips (2 Ingredients)
My family and I inhaled these yummy carrot chips. I made these in response to all my other chip recipes going viral – so clearly we are in need of healthier snack options and I’m quite happy to oblige. The dip we used is our viral Lazy Tzatziki Dip mixed in with a little Sriracha sauce for some heat!
These were definitely the simplest chip recipe I made thus far. No par boiling or roasting necessary here. Simply peel and slice your carrots into thickish coins and you’re done with the prep. I used shredded parmesan cheese and layered on the carrot coins so they were mostly touching. Next lightly coat them with some olive oil and season with your soul.

Crispy Carrot Chips
Ingredients
- 7 oz shredded parmesan cheese
- 3 large carrots, peeled
- 1/2 tbs olive oil
- salt, paprika + onion powder to taste
- Serve with: Lazy Tzatziki
Instructions
- Preheat your oven to 400℉. Line a 12×17 inch rimmed baking tray with parchment paper.
- Sprinkle the parmesan cheese on the tray to form an even layer.
- Slice your carrot into medium thickness coins. Not too thick not too thin. Place them on top of the parmesan cheese to form a uniform layer – mine were touching. LIGHTLY brush the tops with olive oil and season with salt, paprika and onion powder to taste. Bake for 20 minutes or until the edges are mostly brown and the middle is golden brown. Allow to cool for a few minutes and tear into chips with your hands. Enjoy!
Delicious & crispy! I did buy the carrot chips already in a bag & used about 2/3 of the bag. I also mixed the oil, onion powder, paprika, salt & carrots in a bowl. Then laid them on the grated cheese. They came out great! Thanks again Stella! 😁

in recipe: 400 deg for 20 min until edges are brown and middle golden brown, cool
I’ve got the ingredients to make them but am curious about leftovers. Do you heat them up after they’ve been refrigerated? Or eat them cold?
I know, I know, there shouldn’t be leftovers. Maybe I’ll need to make a smaller batch instead.

Delicious! I only had hot pepper cheese shreds and canned carrot slices but this recipe still turned out delicious! I didn’t leave them in the oven as long since the carrots were already soft. Hey sometimes you just have to use what you have on hand. The carrots weren’t as crunchy but I still loved them all the same. Thanks for the recipe!

Hi STevie, yes that would work in the recipe here but you might not get a super crispy ‘chip’ so to speak. They will still taste great though!
