Easy Baked Berry Protein Pancake (5 Ingredients)

- 2 eggs, lightly beaten
- 3/4 cup Greek yogurt
- 1/3 cup strawberry preserves
- 1 tsp vanilla extract
- 5 tbs arrowroot powder
- pinch salt
- optional garnish: frozen berries
Instructions
- Preheat oven to 350℉. Line an 8×4 inch loaf pan with parchment paper.
- In a medium bowl, whisk together the eggs, yogurt, strawberry preserves and vanilla until smooth. Next, add in the arrowroot powder and salt and mix together until incorporated. Transfer mixture to the loaf pan and top with frozen berries. Bake for 40-45 minutes or until a toothpick comes out clean. Allow to set in the pan for 15 minutes then transfer to a wire rack.
Notes
- Store leftovers in an airtight container in your fridge up to 4 days.
- If you don’t have strawberry preserves, you can use blueberry, raspberry, fig, apricot, etc.
- Berry topping can be fresh or frozen.
- Instead of arrowroot powder, you can use cornstarch, tapioca flour or regular all purpose flour.
