Sweet Potato Nachos
The most delicious in which to consumer your sweet potatoes.
Sweet potatoes happen to hold a special place in my heart. They are full of vitamins and nutrients and their sweet flavor with some spicy seasonings make me a very happy girl. I always reach for them in the kitchen when I’m trying to avoid bread or pasta but still need a starch to consume to fill me up.
Any toppings will work on these crispy sweet potato rounds. Black beans, pinto beans are both the favorites on this one. Any cheese, like cheddar or monterey jack taste so good. You can also air fry the sweet potatoes too.
Sweet Potato Nachos
Ingredients
- 3 large sweet potatoes
- 2 tbs olive oil
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp chili powder
- salt to taste
- 15 oz black beans, drained + rinsed
- 1.5 cups cheddar cheese
Optional Toppings:
- avocado, sliced
- tomaotes, diced
- pickled red onions
- jalapeño, sliced
- sour cream
- chopped fresh cilantro
Instructions
- Preheat your oven to 425° F. Line a baking sheet with parchment paper.
- Peel your potatoes and slice them into 1/4 inch rounds. Transfer to baking sheet and toss with olive oil and spices. Use your hands to coat all the potato rounds.
- Arrange them in a single layer on the baking sheet and bake for 20 minutes.
- Remove from the oven and top with beans and cheese. Return to oven for additional 5 minutes.
- Remove from the oven again and garnish with your preferred toppings. I used avocado, roasted jalapeño, pickled red onions, sour cream and fresh cilantro. OLE!
