4 Ingredient Blueberry Banana Quick Bread (Vegan)
This recipe is one of the best ways to use up your blueberries and bananas by combining them to create this delicious and moist breakfast/snack/dessert cake in a loaf pan. If you don’t have blueberries, you can use blackberries or raspberries.

If you don’t have Self Rising Flour, you can make it your own at home. For this recipe, whisk together 1 3/4 cups all purpose flour, 2 3/4 tsp baking powder + 1/4 tsp salt. You can also use regular Sweetened Condensed Milk and make sure to check out the note on that in the recipe box below.

- 3 ripe bananas, (1½ cups mashed)
- 11.5 oz sweetened condensed coconut milk
- 1¾ cups self rising flour, sifted
- 1 cup blueberries
Instructions
- Preheat your oven to 350℉. Line a 9×5 inch loaf pan with parchment paper.
- In a large bowl, mash your bananas. Stir in the sweetened condensed milk until smooth and incorporated. Sift in the flour and stir to combine. Lastly fold in the blueberries. Transfer the batter to your pan and spread out evenly. Add some more blueberries to the top of the batter and bake for about 55 minutes to 1 hour (or until a toothpick comes out clean). Allow to set in the pan for 5-10 minnutes then turn it out onto a wire rack to fully cool.
- Homemade Self Rising Flour: 1¾ cups all purpose flour + 2 ¾ tsp baking powder + ¼ tsp salt
- If you're using regular Sweetened Condensed Milk that comes in a 14 oz can, use 2 cups self rising flour. Homemade SRF: 2 cups all purpose flour + 3 tsp baking soda + 1/2 tsp salt
