Baked Cheesy Zucchini Stacks
Baked stacks of cheesy zucchini are the yummiest of poppers.
These incredibly delicious zucchini stacks are adorable and taste amazing. Simple to make is an understatement. Make sure you use a mandolin slicer to get them nice and thin. You can also slice them with a knife too.
Dredging these takes a little time but it’s worth it. You can add any additional seasonings you like to this recipe but salt is not necessary. There is enough from the Parmesan cheese.

Baked Cheesy Zucchini Stacks
Ingredients
- 2 large zucchini, sliced thin
- 2 eggs, beaten
- 3/4 cup grated parmesan cheese
- 1/3 cup flour of choice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- black pepper to taste
Instructions
- Preheat oven to 400° F. Line a baking sheet with parchment paper.
- In 3 separate bowl, house your eggs in one, the parmesan cheese in the second and in the third whisk together the flour and seasonings. No salt is needed for this recipe.
- Grab about 6 slices of the zucchini and dredge them first in the eggs (allowing excess to drip off), then the parmesan and lastly ONLY the tops and bottom of each stack in the flour mixture.
- Bake for 35-40 minutes or until the stacks are golden brown and crispy.
Notes
Dip in some tsatziki sauce.

No I dont remove the seeds
super easy to make added paprika and absolutely delicious.. highly recommend you try this yummy recipe with the usual glut of courgette..

I dipped the zucchini in flour first and then egg wash and lastly the breadcrumbs (with pecorino Romano). Everything incorporated just right.
I just got an air fryer…do you think these would work well using that instead of pan frying?

🤦🏻♀️ same here I not only dusted the whole stack with flour I kept baking until they looked like urs, sprayed the snow covered stack with evoo spray helped but I will try again..
These for sure need a flip halfway through! I was also willing to try the no salt needed- but there’s definitely some salt needed!

The flour between the slices tasted a bit uncooked. They were also a bit dry. But!! I love zucchini and will make them again, the right way. Thanks for the great recipe.
tried this recipe awhile ago, the zucchini did not stick to the flour etc, just fell apart, disappointing but will try again.
