Easy Tortilla Strip Pizza
I don’t think I’ve made anything so different, quick and yummy in a long time. Its so easy and delicious – it will definitely become your go-to snack, appetizer or meal. I would also recommend meal prepping this too – it reheats great.
The beauty of this dish is that you can customize it to your own preference by using any tortilla (like low carb or gluten free) you prefer. You can use any cheese and toppings you like best. And if you’re missing the cottage cheese, simply sub in some milk.
This dish only takes 15 minutes to make but its very important that you cook this dish on LOW HEAT once you cover the pan and walk away. It will burn the bottom if the heat is any higher.

Tortilla Strip Pizza
Ingredients
- 2 tbs olive oil or butter
- 3 low carb tortillas*
- 3 eggs, beaten
- 1/2 cup cottage cheese (or milk)
- salt and pepper to taste
- 1 tomato, diced (seeds removed)
- 2 oz Kalamata olives, sliced
- 1/2 cup shredded mozzarella
- 1/4 cup fresh parsley, chopped
- optional: chili pepper flakes for garnish
Instructions
- Stack your tortillas evenly and then roll them like a cigar to form a long funnel shape. Grab a sharp knife and start cutting into strips.
- In a small bowl, beat your eggs and then mix in the cottage cheese.
- To a medium pan add your oil and heat on medium high. Add in the strips and evenly spread them out. Pour the egg mixture evenly over the strip. Flatten any pieces sticking out down. Add on the tomato and olives next. Then sprinkle on the cheese and finally the parsley. Cover the pan with a lid and lower the heat to LOW. Allow this to cook 10 minutes. Transfer the pie to a cutting board and let it set for a few minutes. Then slice and serve with chili pepper flakes.
did you use the small or large tortillas?
I have made this twice now!! I just love it! Second time around I added Cavender’s Greek seasoning to the egg mixture. Didn’t have olives so I used some bell peppers. Next time I plan to use some fresh spinach. Thanks so much for sharing this recipe!

yummy! made with turkey breakfast sausage crumbles, mushrooms, carb balance tortillas. & sprinkled with scallions before serving. might have to try zucchini noodles in place of tortillas sometime.

I want to mke this but over 800 in sodium is way to much..
If i omit the olives and cut back on the cheese and use sauce tomtoes will it bring down the sodium?

Hi Suzy, I’m not a nutritionist but I think it will definitely bring the sodium down a lot.
Cottage cheese is usually very high in sodium, so I’m going to use Greek yogurt instead to make is a little lower in sodium.

10 DELICIOUS &easy to make.
Super good I added Italian spices to the cottage cheese mixture and on top. I did the 10 min with lis and then microwaved 40 seconds to make sure it was cooked well. Then let it cool and cut super filling. I used spinach, pepperoni, sun dried tomatoes as that is what I had in fridge along with Monzerrla cheese and I used low carb flat bread it super thin and worked well.

I made this tonight. It was really good. I made it a true Mexican style with diced peppers, shallots, tomatoes, Mexican seasoning and cheddar cheese. Very tasty! I think I’m going to make a breakfast one with veggies and crumbled turkey sausage.

Can the tortilla pizza be baked in the oven instead of stovetop?
I’m wondering about doing it in the oven too. Did you try it? We’re a household of ten so need to use multiple pans. I’m thinking several of my cast iron skillets, without lids.
