Baked Zucchini Sticks (Gluten Free)
These are not for sharing. Or you can double the recipe to make things fair. I eat these for movie night with a nice squeezing of lemon. I don’t even need a dip. Although a delicious yogurty Tsatziki is a duly welcomed addition.
Ingredients:
The simplest of recipes sometimes produces the greatest of results. All you need for this yumminess is two zucchinis, olive oil, cheese, corn meal and spices. I added some paprika, onion powder and garlic powder.
substitutes:
Any cheese will work with this recipes. Just make sure it is grated and in small crumbles. If you don’t have corn meal, you can use corn starch or regular all purpose flour. You can even use bread crumbs or almond flour.

Zucchini Sticks
Ingredients
- 2 large zucchinis
- 3 tbs olive oil
- 3 tbs Parmesan cheese, grated
- 3 tbs corn meal
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- salt to taste
- serve with lots of lemon
- Dip: Lazy Tzatziki
Instructions
- Preheat oven to 420°F. Line a baking sheet with parchment paper.
- Slice your zucchini into sticks – not too thick and not too thin. Transfer to a large bowl and add in the oil. Stir to coat everything well. Next add in the cheese, corn meal and spices. Toss again to coat all. Transfer to your baking sheet and spread out (its best if they don't touch). Bake for 25 minutes or until crispy. Serve hot with lemon wedges.
Very tasty but I recommend putting on the broiler if you use starch instead of cornmeal.

Hi Jeannie! Yes, some zucchini are more liquidy than others I guess. I suggest sprinkling with salt to sweat them out and then dabbing them well with paper towel to get the water out of em.

I made these in the oven and they’re great but I wish they were crispier so I broiled them at the end.
Now I’m obsessed so I actually just bought an air fryer (which I’ve never used before).
Do you know what temp and how long in an air fryer? I assume I’m meant to use much less oil (perhaps spray oil).

Hi Marci! Oh congrats on the new purchase!! I would do them at 400 degrees F for 10-12 minutes or until crispy. Flip them half way thru if possible. And yes. I always spray them with olive oil once theyre in the basket. Let me know how you like them and enjoy!!
Hi there! Going to try this recipe tonight with some grilled fish and wild rice. CAN’T WAIT! They look delicious! Only thing I was wondering: my guy can’t have gluten OR dairy – would nutritional yeast work in place of the parmesan cheese? Tried finding lactose free parm but both my local stores were out. Hoping these will still turn out without the cheese, but thought I’d ask first.

You say to cut it not too thick and not too thin, can you be a little more specific? I am making these tonight, like is it supposed to be about a half an inch wide? Or less, or more?

I did tweak the receipe a little for those looking for a bit more spice: I added a few chilli flakes, and fresh ground pepper. I used panko and reduced the olive oil to 1.5 TBS and I didn’t have lemon so I added a few droplets of lime juice before I put them in the oven!
I baked it at 425 degrees for 20 minutes! Thank you for sharing your receipe Stella!
