Crispy Brussel Sprout Chips (2 Ingredients)
We had a big bag of brussels sprouts from Costco and knew this would be the perfect way to use them. Another winner snack to enjoy as opposed to a bag processed chips from the store.
Make sure you cover the bottom of the pan evenly with the parmesan shreds – in a thin layer. Position them as the picture above – close together. Also make sure to watch them as they bake, the cheese can get brown quickly and you don’t want it to burn.
We used the delicious Lazy Tzatziki Dip that’s on the site, with some grated parmesan added to it for extra flavor. You can also skip the dip and still love this recipe!

Crispy Brussels Sprouts Chips

- 1½ lbs brussels sprouts, stemmed + halved
- 7 oz shredded parmesan cheese
- 1 tbs olive oil
- garlic powder + salt + pepper to taste
Instructions
- Preheat your oven to 400℉ Line a 12×17 inch metal sheet pan with parchment paper. Sprinkle the parmesan cheese on the pan to form an even layer, covering the bottom of the pan. Place the brussels sprouts cut side down, close to each other but not touching. Lightly brush each one with olive oil and sprinkle a little salt, pepper and onion powder on them. Bake for 15-18 minutes or until the cheese turns golden brown in the middle. Allow to cool for a few minutes and then tear/brake apart with your hands. Enjoy!
Notes
- Served with Lazy Tzatziki Dip
- Store leftovers in an airtight container in your fridge. Reheat in a mini oven!
It turned out great! I tweaked it the 2nd time to add cauliflower florets, sprinkled all over with minded pepperoni (I try to use what I have on hand), and dabbed with herbs mixed with olive oil and aleppo pepper. Yum!
In the list of ingredients it says garlic powder and then onion powder in the instructions. 🤷🏼♀️
I will go with both. 😊
what is the temperature of the oven to cook the brussels sprouts
Can I ask what brand of Parmesan cheese you use?
Hi Karen, I use either Whole Foods 365 shredded parmesan in the plastic container or Trader Joe’s grated parmesan in the bag. Hope this helps…

Will Mozzarella cheese get as crispy as parm?

Made tonight and they were so good! My husband loves Parmesan crisps so I was excited to try it. I used room temp Brussels sprouts and prepared shredded parm. I brushed with avocado oil. 15 minutes the cheese was brown but the center was still a little light… definitely could have done a few minutes longer. I tried peeling right away but only easily came off the parchment a few minutes later.
