Crunchy Panko Salmon Bites (Air Fryer)

These panko salmon bites are air fried in minutes and come out crunchy and golden brown every time!

If you love salmon, you are going to go bananas over these crunchy panko salmon bites. They are ridiculously simple to make and taste next level. You can make this in your air fryer or your oven. If you don’t have panko breadcrumbs, you can use crushed tortilla chips or cornflakes.

There’s not a lot to say about this super simple recipe. Make sure to grab WILD salmon (not farm-raised). Make sure you rinse and dry the salmon well. Also make sure you season the salmon cubes really well. Don’t be shy with seasonings!

This recipe is my family’s favorite way to eat salmon bites. With these bowls you get to enjoy a little bit of everything. I love to serve these with small cut cauliflower florets, roasted to golden brown perfection. You can also do sushi or basmati rice for this recipe. The toppings we used were sliced avocado and my Pickled Red Onions Recipe or my Pickled Purple Cabbage Recipe. I also recommend toasted sesame seeds to finish these bites off!

Crunchy Panko Salmon Bites (Air Fryer)

These panko salmon bites are air fried in minutes and come out crunchy and golden brown every time!

Ingredients 

  • lbs wild salmon, skin removed
  • 1 tbs olive oil
  • 1/2 tsp each salt, garlic powder, onion powder, paprika + Italian herb blend
  • 1 cup panko breadcrumbs
  • olive oil spray

Instructions

  • Preheat air fryer to 380℉ for 8-10 minutes (or oven 425℉ for 10-15 minutes). Use parchment paper if you have it.
  • Slice the salmon into large cubes and coat with the olive oil. Next sprinkle onto the pieces the salt, garlic powder, onion powder, paprika and Italian herb blend to taste and toss to coat.
  • Mix 1/2 tsp salt into the panko breadcrumbs. Dredge the salmon pieces in the panko until well coated. Place them on the air fryer basket – do not overcrowd. Spray the top of the pieces with oil and cook for 5 minutes and then flip them over for another 5 minutes. (For the oven bake for 15 minutes, flipping halfway).

Yum Yum Sauce:

  • In a small bowl, add in mayo, honey, sriracha, lime juice and mix until combined. Taste and adjust flavors if needed.

Notes

  1. Store leftovers in an airtight container in the fridge.
  2. Replace panko breadcrumbs with crushed cornflakes or crushed tortilla chips.
  3. Serve with rice or roasted cauliflower.
