Micro Chop Salad with Sun Goddess Dressing
By request, I make this every year for Thanksgiving. It truly is an unforgettable salad. Everyone in the family gobbles it up. The dressing really does coat every little piece of this glorious, aesthetically pleasing salad. If you’ve never micro chopped your salad, you don’t know what you’re missing. It may take a few extra minutes but it is definitely worth it! The other beauty of this salad is that you can literally use any ingredients you have. Nuts would also be great in here.
The two things that make this salad so very epic are: (1) the BACON and (2) the DRESSING. It’s no secret bacon brings the flavor every time. Don’t get me wrong, this salad would still be bomb without the bacon. But one hundred percent, the factors that take this to next level status, are the meat and the sauce. SO delicious.
The dressing is comprised of quite a few ingredients but you most definitely already have them in your kitchen. Also, they all come together to form a sauce that will make you feel goddess like. Of course, I always recommend tasting your dressing or sauces to make sure the seasonings and consistency is to your preference. If you need to, add 1 more tablespoon of olive oil.

2tbs mustard? What kind?
Hi Michelle, Yes 2 tbs yellow mustard or 1 tbs Dijon mustard. If that scares you, add one tablespoon and taste it. Adjust accordingly.
Is the calorie count per serving or for all 4 servings?
Hi Nancy, Its per serving.
Is that calorie content for the full 4 servings or individual?!?
Hi Barb, Individual. It’s alot of ingredients….
I added up the calories per serving and found a maximum of 600 calories per serving if there are 4 servings.
So good!
Hi Christine! I’m so glad you liked the salad! Thank you for taking the time to comment and rate! <3
Hello. Getting ready to make this salad, it looks delicious! Have you tried storing leftover salad? Trying to decide if I should make extra or if it’ll not keep well to eat the next day..
Thanks!
Hi Su! I would store leftovers separate from the dressing. It should last a couple of days!
I made this last year and it is my go to salad. The dressing is the best
Hi Lisa, it is my favorite too! Thanks for the review!
What size is a serving size? Can’t wait to make this!
Hi where did u get this salad plate
Amazing salad! Beautiful colors and textures. The taste is fantastic! The green goddess dressing is divine!!
Hi Amy, I couldn’t agree with you more! One of my favorite salads of all time!
Already made this twice this week – delicious and refreshing! I used fresh corn off the cob, raw
SO DELICIOUS and HEALTHY!!
Healthy?? 93 grams of fat and 1000 calories??
Outstanding, thank you! My new favorite salad and the dressing is over the top!
Hi Jen, glad you liked it! Its one of my top salads too!
So delicious! Very filling, colourful and the micro chop gives you a delicious chew in every bite! The dressing…yum yum yum
Hi Jannah, perfectly described salad! Thanks for the rating too!
I’m going to make this salad for dinner. Should I toast the sesame seeds and sunflower seeds?
You can go either way but toasted always tastes better!
This was a hit last night with my ladies group! I substituted sliced honey glazed almonds instead of sunflower seeds. Each bite was packed with goodness. Red pepper flakes a nice surprise and not overbearing.
Hi Sheri, I’m glad you and the ladies loved the salad! And thanks for the honey glazed almonds tip!
What do you recommend serving with this?
I’m allergic to honey and I don’t have true maple syrup, any ideas for a substitute?
Such a delicious salad. Honestly I was amazed by its divine taste. Would do it again
Hi Audrey, THIS is one of my favorites! Happy it was enjoyed!!!
What would be a good substitute for pomegranate?
maybe chopped dried cranberries?
It looks great but is there a way for reducing the calories and still maintain the taste
Am diabetic What now?
Looks delicious but is this 1037 calories per serving?
Hi wondering if anyone has made the dressing with avocado oil instead of olive oil??
I substitute avocado oil for olive oil all the time in recipes. This should be no different.
Oh my goodness! Wow!absolutely delicious. I am truly impressed your brain concocted such a great salad. Looking forward to trying more of your recipes. You have a great talent.
Hi Sara, thanks so much for the sweet message! Glad the salad was enjoyed!! Cheers!
The best salad !!! we love it
HI Marilin, thanks so much for the kind rating!
Looks amazing! I will definitely make that dressing. I don’t see how the salad is 1000 cal / serving?? do I have that right? Is that with dressing?
What would be a good substitute for pomegranate?
Hi Beth, I would do dried cranberries or dried cherries!
The best! Can’t say enough good things about this salad. Crunchy, fresh and delish!
HI Christina, thanks so much for trying it! Glad you liked it!
I will definitely make this again as it was a hit at our gathering. The slightly spicy salad has the perfect blend of flavors which is only enhanced by the dressing. What little remained, was even delicious the day after.
Hi Trudy, so glad you enjoyed this salad at your gathering especially! Thanks for the kind rating too!
I want to try this but what can I substitute pomegranate for if it’s not in season
Hi! I would do dried cherries or dried cranberries instead of pomegranate!
Is this a main salad or a side salad?
Hi Vivian, its definitely a main at dinner or a side dish for a large party!
Can’t stop making this !! Yum yum
Hi Belle, I feel you! Glad you are enjoying the salad!!
95g of fat per serving? That’s not healthy.
How long will dressing last in the fridge if I make extra for another day ?
No more than 3-4 days
I made a version as a side salad but without the dressing.
It was delicious and a lot less fat.
HI Linda, glad you adapted the recipe to your preferences! Thanks for the rating too!
Linda! Was this comment necessary? We are rated HER recipe. Tsk tsk.
I sounds so good! I’ll make this salad, no doubt. However, I can not use that yummy sounding dressing. I would literally have a coronary!
Delicious!!!
HI Anne, glad you liked the salad!
Hello. Can I replace the Mayo with something else? Maybe oat yoghurt? Do you think that would work?
Thank you. 😊
Yes, yogurt or sour cream works as a sub!
Awesome awesome awesome. My 3/5yrar old sons loved it, husband loved it, delish! Thank you!
This salad is one of the best I have ever tasted. I have made it as the receipt states and also changed it according to my family’s preferences. The base of carrots, cucumbers, cabbage, and romaine with the dressing is amazing. I did not have chives for the dressing and while we love them, they were not missed. I chop, shred, and make the dressing and store for in the fridge and make fresh and delicious variations throughout the week. So good!
HI Kim, thanks for sharing your feedback with us – definitely helpful! Glad you all liked it!
Exquisite! Loved this. Omitted corn and did not have sesame seeds but used toasted almonds as suggested. Beautiful and delicious! Yay Stella.
Hi Christina, Sounds delicious! Glad you tried it and liked it! Cheers!
Wow……this was so delicious I ate way too much!!! That sun goddess dressing will now be one of my regular dressings! Pomegranates are out of season for me right now but next time I will add the pomegranate. Going to have this again for dinner tonight! So much wonderful crunch and the texture of the finely chopped veggies is so satisfying. I boiled corn and cut it off the cob and it added so much extra yum. Super yummy!!!
Hi Emily, Sounds amazing ! Thanks for the super kind feedback and I”m so glad you enjoyed!
LOVE! I will never buy store made salad dressing again:) This is my go to salad and every time I make is for guests, there is requests for the recipe. I am so happy I discovered your site, you have turned me into a cook!
Hi Jennifer and welcome! Thats the best compliment for me and I’m so glad you love this salad this is a house favorite with my family! Keep cooking!
I made this today substituting the bacon for pepperoni which I toasted in the oven then sliced. the amount for the dressing was more than enough for the salad so I wrapped it and saved the rest (slightly less than half) in the fridge.
This salad is beyond delicious! I could eat this every day!!
I LOVE THIS SALAD AND DRESSING! The micro chopped veggies appealed to me right away! (I’m tired of trying to fit large pieces of greens in my mouth or chasing salad ingredients around on my plate….) The veggies had crunch and nutrition, yes! Additionally, I hate making dressings because i usually spend the little time I have finding, measuring, and adding the ingredients all to find out I don’t like it. This time I took a chance and WOW it was AMAZING. (I used honey and dijon). Thank you for a great recipe that will live in infamy in my household.
I make this salad for every party I go to, and everyone goes nuts and wants the recipe. Thank you for making and sharing such delicious recipes!
Hi Kristie, thats fantastic and I’m so glad its a hit with everyone! Thank you for the kind feedback <3
Hi Stella,
I have just joined your group and found the micro salad, can you make it all up including dressing a couple of hours before hand or is it best to add dressing just before serving.
Hi Kay and welcome!
Yes you can prep the salad before hand but the dressing must be kept separate and added only when you are ready to eat the salad. Enjoy!
Thank you for sharing all your recipe it will helps people who don’t know to mix else salad can make It’s all fresh and delicious. I love salad. Thank you once again. happy and many more blessings to come. Keep us healthy.Form Marilou in Florida
Hi Marilou, glad you like the recipe and thank you for supporting the website and taking the time to comment and rate the dish! Cheers!
This is the recipe that started my love for your page! simply Delicious! Historically, I enjoy baking, making dinners-not so much. LOL However, your recipes are filled with such beautiful color and are easy to follow that I find myself loving the entire process. At any rate, this salad is still my go to meal and never disappoints. Thank you
This salad is so delish and the dressing is to die for. Made extra dressing for another day. So yummmmm. We had this with Stella’s Melt in your Mouth Chicken. (which does melt in your mouth).
Having the lemon pepper chicken souvlakia tonight.
Stella, you have made my life so much easier.
