Micro Chop Salad with Sun Goddess Dressing
By request, I make this every year for Thanksgiving. It truly is an unforgettable salad. Everyone in the family gobbles it up. The dressing really does coat every little piece of this glorious, aesthetically pleasing salad. If you’ve never micro chopped your salad, you don’t know what you’re missing. It may take a few extra minutes but it is definitely worth it! The other beauty of this salad is that you can literally use any ingredients you have. Nuts would also be great in here.

The two things that make this salad so very epic are: (1) the BACON and (2) the DRESSING. It’s no secret bacon brings the flavor every time. Don’t get me wrong, this salad would still be bomb without the bacon. But one hundred percent, the factors that take this to next level status, are the meat and the sauce. SO delicious.

The dressing is comprised of quite a few ingredients but you most definitely already have them in your kitchen. Also, they all come together to form a sauce that will make you feel goddess like. Of course, I always recommend tasting your dressing or sauces to make sure the seasonings and consistency is to your preference. If you need to, add 1 more tablespoon of olive oil.

2tbs mustard? What kind?
Hi Michelle, Yes 2 tbs yellow mustard or 1 tbs Dijon mustard. If that scares you, add one tablespoon and taste it. Adjust accordingly.
Is the calorie count per serving or for all 4 servings?
Hi Nancy, Its per serving.
Is that calorie content for the full 4 servings or individual?!?
Hi Barb, Individual. It’s alot of ingredients….
I added up the calories per serving and found a maximum of 600 calories per serving if there are 4 servings.
So good!
Hi Christine! I’m so glad you liked the salad! Thank you for taking the time to comment and rate! <3
Hello. Getting ready to make this salad, it looks delicious! Have you tried storing leftover salad? Trying to decide if I should make extra or if it’ll not keep well to eat the next day..
Thanks!
Hi Su! I would store leftovers separate from the dressing. It should last a couple of days!
I made this last year and it is my go to salad. The dressing is the best
Hi Lisa, it is my favorite too! Thanks for the review!
Amazing salad! Beautiful colors and textures. The taste is fantastic! The green goddess dressing is divine!!
Hi Amy, I couldn’t agree with you more! One of my favorite salads of all time!

Hi Jannah, perfectly described salad! Thanks for the rating too!
I’m going to make this salad for dinner. Should I toast the sesame seeds and sunflower seeds?
You can go either way but toasted always tastes better!
This was a hit last night with my ladies group! I substituted sliced honey glazed almonds instead of sunflower seeds. Each bite was packed with goodness. Red pepper flakes a nice surprise and not overbearing.
Hi Sheri, I’m glad you and the ladies loved the salad! And thanks for the honey glazed almonds tip!
What do you recommend serving with this?
Such a delicious salad. Honestly I was amazed by its divine taste. Would do it again

HI Marilin, thanks so much for the kind rating!
Looks amazing! I will definitely make that dressing. I don’t see how the salad is 1000 cal / serving?? do I have that right? Is that with dressing?
What would be a good substitute for pomegranate?
Hi Beth, I would do dried cranberries or dried cherries!
The best! Can’t say enough good things about this salad. Crunchy, fresh and delish!
HI Christina, thanks so much for trying it! Glad you liked it!
I will definitely make this again as it was a hit at our gathering. The slightly spicy salad has the perfect blend of flavors which is only enhanced by the dressing. What little remained, was even delicious the day after.
Hi Trudy, so glad you enjoyed this salad at your gathering especially! Thanks for the kind rating too!
I want to try this but what can I substitute pomegranate for if it’s not in season
Hi! I would do dried cherries or dried cranberries instead of pomegranate!
Is this a main salad or a side salad?
Hi Vivian, its definitely a main at dinner or a side dish for a large party!
